NBR: need yummy breakfast recipes

I'm still in search of what will be our "traditional" Christmas morning breakfast. We've tried a french toast casserole that sounded amazing, but just came out ok.. I want something different than the typical bacon, scrambled eggs, etc meal..

I am thinking of making homemade cinnamon rolls, and a quiche of some sort. Anyone have any good recipes for those, or any other super yummy ideas? They need to be relatively easy, because a gourmet chef, I am not. SmileTIA!

    I hear you! My DH doesn't eat eggs so most breakfast casseroles are out for us. I found this recipe that I plan to serve this year with some fresh fruit and scrambled eggs on the side. Doesn't it sound so healthy?!:

    STUFFED BAGELS

    6 (day-old) bagels
    1 (1-lb) package bulk sausage, hot or regular
    3 cups grated cheddar cheese

    ? Split bagels in half horizontally.
    ? With fork or grapefruitspoon, hollow out bagel halves, reserving all crumbs separately in large bowl.
    ? Combine crumbs, sausage and cheese, mixing with hands until well blended. (Tip: a mixer with a dough-hook attachment works great)
    ? Stuff sausage mixture into bagel shells and place on baking sheets, stuffing side up.
    ? Place baking sheets in freezer overnight, or at least one hour.
    ? Place frozen bagels in ziploc bags in freezer for storage.

    To prepare:
    ? Preheat oven to 400 degrees; bake frozen bagel 20 to 25 minutes, or until sausage is cooked thoroughly and stuffing is bubbly.

    To serve:
    ? Cut bagel halves into quarters and serve hot as appetizers. Cut in half and served with fresh fruit, they make a great holiday breakfast.

    Mmm--that sounds yummy, MrsN! I've decided that for Christmas morning, calories don't count.

    I found this cinnamon roll recipe from Sandra Lee that sounds just my speed, with no yeast involved. And OMG--I watched the video of her making them, and I'm now drooling. I think this one is a winner for me. Smile

    This sounds a little weird, but it is SO delicious! A girl brought it to our last MOPS meeting and it was devoured.

    MrsN - it has no eggs, so maybe your DH would like it.

    blueberry muffins (with a candle to sing happy birthday to jesus)

    sausage and egg casserole

    grits

    fruit

    By far my favorite!

    1 pound Jimmy Dean Sausage, browned
    Tabasco sauce to taste
    1 small clove garlic, minced**
    1/2 tsp salt
    1 Cup instant grits
    2 cups boiling water
    1 Cup grated cheddar cheese (4 ounces)
    1/4 cup butter, melted
    2 large eggs, well beaten
    8 oz can green chiles, chopped
     
    Brown sausage and drain. Add Tabasco sauce, garlic and salt to sausage. Set Aside. Cook grits in 2 cups boiling water. Add all ingredients together, stirring until well mixed. Pour mixture into well buttered 9x13 baking dish. Bake uncovered at 350 for 1 hour.
     
    **I never put the garlic in

    Quiche Lorraine

    1 pie crust
    6 slices bacon fried and crumbled
    small can of mushrooms
    1 cup of 4oz shredded swiss cheese
    1/2 cup of onions
    1 T flour
    1/2 (doesnt say what, I've been using tsp) Salt
    1/2 pepper
    1/2 garlic powder
    2 eggs beaen
    1 small can evaporated milk

    bake pie crust for 5 minutes at 450.  Reduce heat to 350. mix bacon, mushrooms, cheese, onions, flour, salt, pepper, garlic and put in pie crust.  Mix egg and milk - pour over the above.  Bake for 1 hour. 

    Also,

    ACC Potato Casserole

    2 lbs frozen hashbrowns (thawed)
    1 stick butter
    1 pt. sour cream
    1 can cream of chicken soup
    1/2 cup finely chopped onion
    2 cups shredded extra sharp cheddar cheese
    1 tsp salt
    1/2 tsp pepper

    Combine these ingredients and put in a greased  2.5 to 3 qt. casserole dish.
    Then combine 1 cup crushed cornflakes (or enough to cover the top) and 1/4 to 1/2 of a stick of butter melted. Toss the corn flake crumbs in melted butter and sprinkle on top.
    Bake at 350 degrees for 40-45 minutes - should be golden brown on top.
    Serves 16-20.  Great for brunch or as a side dish for dinners.

    I would like this recipe even if no one else does!  I love gruyere after having it in the potato recipe I got from you a while back.

    Oh yeah- that's why I love the pioneer woman so much- she is unafraid of extreme butter usage. And did you know that calories don't exist in the month of December?
