I know mom's sometimes take cupcakes to daycare for their LOs b-day. But since Cooper is in the baby class, it would probably be crazy for me to take anything up there, right? If I did anything it would be something like little bags of Goldfish or Teddy Grahams - not cupcakes. A few kids are close to his age, but over half are probably still on bottles only.

We did cupcakes in the baby room with both boys. It makes for some cute photos with future friends as they sit in their high chairs eating cake together.
If you're not going to be there, however, there is not much to gain. You could do nothing and your son won't really care. First birthdays are for us, really - (Yippee! We made it!)
Goldfish and teddy grahams sound perfect. Just never thought of it.
Here's my observances of cupcake+baby room at daycare:
They scrape off all the icing, except for the birthday boy/girl - and only then if the parents are there and ok it.
They also call to OK giving the babies cupcakes - so no one who is not ready for sugary sweets need participate completely.
Asking the teachers gives guidance to how many cupcakes to bring - (make sure they count themselves).
