I would make it into turkey noodle soup and freeze it. I make chicken noodle soup and then freeze in little portion-sized zip locks for quick lunches for DD, it works well.

just made two batches of turkey tetrazini to freeze and some curry turkey salad. then put some shredded turkey in the freezer in 2 cup portions for meals later. I cannot eat turkey all next week.
for the turkey salad, we just added a little diced onion, diced celery, salt, curry powder, mayo ... and I'd add raisens if I had them ... would be good if you rolled it in croissant dough and baked it in 'em.

make your pasta (linguini or spaghetti)
butter, mushrooms and onion in a saucepan until tender, add some flour (I did a double batch, so I used a whole onion, 4 green onions, a batch of presliced baby bella's from the grocery, 1/2 stick butter, and maybe a 1/3 -1/2 cup flour)...... mix good... add equal parts milk (or cream) and broth (chicken)... I used about 2 c each.... mix until thick and bubbly... add salt, pepper, nutmeg... a little sherry cooking wine... then some parmesan cheese... mix in the pasta... pour into casserole dishes... top with sliced almonds and parmesan cheese. bake.
I make up some heat and eat meals to put down in the deep freeze. I may not want leftovers now but when H is away on business and I don't feel like cooking for myself...it a nice surprise.
The carcass has already been cooked down to stock and the left over meat is shredded and down in the deep freeze as well.
I've made P.W's chicken spaghetti with leftover pork and turkey before. I use some of the water from the pasta or add chicken broth or something. always a hit at our house. or soup,
We made turkey soup and salad. I will prob toss the side dishes tomm. I just saw this report on leftovers on the news this morning. It said to toss stuffing and gravy within 24 hrs bc its a major carrier of bacteria. Everything else, dont keep past 72 hrs, or the chance of foodborne illness increases greatly. Im not one to go nuts tossing things, but I get sick of looking at turkey! Desserts however.... Not so much

Turkey pot pie is a good idea. The kids would def eat that. I think. I just put the shredded turkey in the freezer for later.
