Oddly enough there isnt a lot of mexican food places near us here in san antonio. In Houston there is one on every corner. I dont get it.
anyway, I'm seeking real queso for my fajitas tonight (barring AC is fixed and I can cook my yummy marinating all day long fajitas!)

There is a white cheese in the super market (it's always near the tortillas here) the name brand is chihuahua (Chi hooa hooa, according to H's aunt, bahaha). It melts like velveeta but has the queso flavor.
That's all I've got. That's what I buy when I make nachos or quesadilla's.

I haven't tried this yet, but it look delish. You can probably use this recipe or tweak it to make what you're looking for.

Here is the one I have been making.
1 cup of shreddred monterey jack cheese
1 cup of American cheese
1 cup shredded cheddar cheese
3 roasted poblano peppers (finely chopped)
8 oz tomatoes ( finely chopped)
1 cup heavy cream
1 1/2 tbsp of ground garlic
salt to taste
Directions:
Combine all of ingredients in crockpot. Cover and cook on low for about 2 hours, stirring occasionally, or until cheese is melted. Thin with more milk or cream if necessary. Taste and adjust seasoning. For additional flavor, add finely chopped onion, ground cumin, chopped roasted red pepper, etc..
Serve hot from crock with tortilla chips.
