Hi ladies,

Sorry u-pick strawberries starts on Thursday and I was hoping you maybe able to give me some new ideas for recipes.  I would love to try out something new with some of them.

My friend makes an awesome strawberry cake. However, I think she used gelatin for the strawberry flavor. She does cut strawberries up and layer it on top and you could even make layers and put them in between.

I have a really simple pie technique.

You will need:

strawberries

sugar

frozen pie crust

whipped cream

 

Set pie crust out to defrost. Slice fresh strawberries into bowl and add 1/4 cup sugar. Fold to coat with sugar and refrigerate for 30 mins. Stir occasionally.

While strawberries are in the fridge getting syrupy, bake  pie crust (empty) according to package directions - this usually takes about 10-15 minutes. Try to time this so it is done when the strawberries are ready to come out of the fridge - they should be sitting in their own syrup and no sugar crystals are left. Remove hot pie crust from oven to heat safe surface and dump in the strawberries and their syrup. Serve immediately with whipped cream.

I use this fruit cobbler recipe with strawberries and it always turns out amazing. I usually make it when I have some strawberries that will go bad in a day. I'm making it tonight in fact.
