Recipe guidance?

Does anyone have any simple and healthy recipes that a working mom can whip up without having to compromise in taste? Please share!

    Here's one of my favorites, enjoy!

    Crunchy Oriental Chicken Salad

    2 T. butter

    1 pkg. Oriental-flavor ramen noodles (chicken works fine too)

    2 T. sesame seeds

    1/4 c. sugar

    1/4 c. white vinegar

    1 T. sesame oil

    1/2 t. pepper

    2 c. cubed & cooked chicken

    1/4 c. peanuts

    4 medium green onions, sliced (approx. 1/4 c.)

    1 bag coleslaw mix

    1 can (11 oz.) mandarin oranges, cut in halves

    1. Melt butter in 10" skillet over medium heat. Stir in seasoning packet from ramen noodles. Break block of noodles into bite-size pieces over skillet; stir into butter mixture.

    2. Cook 2 minutes; stirring occasionally. Stir in sesame seed. Cook about 2 minutes longer, stirring occasionally, until noodles are golden brown; remove from heat.

    3. Mix sugar, vinegar, oil and pepper in large bowl. Add noodle mixture & remaining ingredients; toss.

    Can serve hot or cold. Keeps well in refrigerator for 3 days.?
