S/O - making cakes, etc from scratch

Cakes, cupcakes, breads, other pastries....how many of you do this on a regular basis? 

I have only started doing this.  Made my first batch of *cupcakes* last week.  But I guess I overmixed because they were more muffin like.  Still tasted good though. Very good.  Just not a light fluffy cupcake.

  • I probably split 50/50 between from scratch and mixes.  Depends on the audience so to speak.

    The one thing I like 100% better from scratch is pudding.  Seems like a waste of time at first, but once you taste the difference you change your mind.

  • I make things a few times a week.  Brownies, cakes, cream puffs, cookies, pies...anything else I find that looks interesting and yummy.

    I use it to relieve stress (the baking part).  Plus, I give it out to friends and neighbors.

    I have a running list of things to make.

  • I only make them from scratch now.  The recipe on the back of the Hershey's Cocoa can is amazing.  You just can't top it and it's so easy to make. I think it's the Perfectly Chocolate cake or something.  By far the moistest cake I have ever made.

  • All desserts 100% from scratch, plus bread from our bread maker and DH recently started making homemade tortillas (OMG, yes, drool on the tortillas). I'm a dessert snob and really love homemade. And it's about 2 minutes more work than using a box, imho.

  • I do make bread from scratch (or I have) and things like cookies, banana bread, etc, but have never made cakes or cupcakes or brownies from scratch.  I'd like to try sometime...in all my free time with three kids under 4.  Stick out tongue
  • I had one hell of a time making these cupcakes.  Had five separate bowls, add this this and that a little at a time, careful to to over-mix the flour, etc.  Is that normal??
  • I bake 2-3 times per week.  I very rarely make anything from a box.  Its not that much more work and the finished result tastes so much better.

  • We bake from scratch most of the time... it's just as easy, and more fun for DD, I think.

    Not really, lol. Try the Better Homes and Garden's cookbook (the classic red and white checked). They have a one bowl chocolate cake that's really easy to make. I make any of their cakes into cupcakes. It's true not to overmix the cake; the more you beat it (hehe) the molecules get all munched up and it makes the batter more dense.

    That is my secret weapon cake and frosting. Everyone always asks me for the recipe, and I politely decline to tell them. LOL

  • I only bake from scratch too.  I've been doing it so long I think it would take me about the same amount of time to use a mix.

    I really like the cupcakes on the Wilton website.  Very moist and light.
