NBR: Crock Pot Roast?

I'm making a chuck roast in the crock pot today, but I'm kind of winging it. I've got potatoes, carrots, and onions. I have a bunch of stuff in the pantry (cream soups, vegetable broth, french onion soup mix, etc.) that are tempting to mix with the roast...

But my question is: do I always have to brown the meat in a skillet before putting it in the crock pot?? Or can I just throw it in there with the other ingredients and cook it all day?

  • i just throw it in there with 1 cup water or broth. season the meat and add your veggies (season those too) then i use brown gravy mix after the roast is cooked to the liquid and let that cook a little more then done

  • I was under the impression you could just stick it in there and it'd be ok.  I'm no crock pot expert though.

  • We alway brown ours but we cook it in a le crusete dutch oven so that we can make a gravy out of the dripping left at the bottom of the pan. But I bet you wouldn't need to brown the roast if your just tossing it in the crock pot. I have  really great, unique recipe if your interested. Good luck!
  • I just season the roast with salt and pepper.  I put my vegetables (carrots, potatoes, and onions) in first then lay the roast (un-browned) on top.  Then I pour in beef broth cover and let it cook.  Pretty simple and it turns out delicious every time!
  • I'd brown, it seals in the juices.  Sounds yummy BTW.

  • I put in 2 cups of water and 2 packets of brown gravy. I put the roast in (no browning) and add the veggies. carrots, celery, potatoes, onions, and mushrooms and let it cook. It always comes out so tender and makes for great leftovers!

     This one is for a dutch oven, but my husband and I have done it in the crock pot too and it worked great. We just thickened the drippings with flour after we pulled the roast out and instead browning the roast and deglazing the pan just toss everything in the crock pot together. I think the cloves and the wine are what gives it the awesome flavor. Have a good dinner!

    3 ? lb roast
    1 tsp pepper
    3 tablespoons olive oil
    2 cups beef stock
    2 cups red wine
    1 bunch parsley chopped fine
    1 tsp salt
    7 whole cloves
    2 ? cups onion
    2 cups peeled carrot chunks (1 inch chunks)
    8 medium sized potatoes
    2 cups canned Italian plum tomatoes with juice
    1 cup diced celery

    1. Heat oven to 350 degrees, Sear roast, brown well
    2. Pour in stock and wine to deglaze pan of dark brown drippings, add
    spices, all vegetables and tomatoes to pan.
    3. Simmer 2 1/2 hrs covered in oven, 1 hr uncovered
    4. Remove meat and veggies, bring sauce to a rolling boil and thicken
    sauce with 2-3 tablespoons flour
