Depends on the cookie. I'm starting my Christmas cooking today. When I'm done, I'll box them up and put them in our attached garage on a shelf, since it's cooler out there. The only cookie that I'll wait until Wednesday to make is the shortbread, since it's better when it's fresh.
I made cookies Tuesday and some people won't get them until today. The people who got them yesterday said they were great...so hoping they last a while. I put them in cookie "boxes" but put cellophane all around them to keep them fresh.
You could make them and pop them in the freezer in a freezer bag. I made cookies two weeks before Thanksgiving and then took them to my parents house. They thawed on the way there and tasted just like the day I made them.
