What on your meal plan?

What do you have cooking up this week at home?? I need some ideas since my husband is off work from tomorrow afternoon until Jan4th!!! Ahhhh now I have to cook more and be productive! Darn!

Re: What on your meal plan?

  • I only do super easy stuff.  We're having minestrone soup tonight.  I'm also making a roast with carrots, potatoes and onions one day, taco soup another (really really good), dirty rice another, maybe lentil soup another and then we'll go out a night or two.

  • if my children cooperate, I'm trying a couple of new recipes this week.

    Drunken Ribs and Chicken and Rice Alfredo.

    We'll probably do baked ziti and a couple of freezer meals too.

  • Yesterday - Baked chicken

    Today - meatloaf

    Tomorrow - crock pot roast

    Wednesday - Chicken enchiladas with left over chicken from yesterday

    Thursday -  Meatball casserole

    Friday - no clue.

     

    I'm having a lazy week.  Can you tell? 

    Our IF journey: 1 m/c, 1 IVF with only 3 eggs retrieved yielding Dylan and a lost twin, 1 shocker unmedicated BFP resulting in Jace, 3 more unmedicated pregnancies ending in more losses.
    Total score: 6 pregnancies, 5 losses, 2 amazing blessings that I'm thankful for every single day.
  • In no particular order:

    spaghetti w/ red sauce, salad and garlic bread

    bulgogi (beef), brown rice and spicy pickled cucumbers

    grilled chicken thighs (yogurt & curry marinated), grilled zucchini and naan

    homemade chicken & wild rice soup and good crusty bread

    grilled pork chops, baked potatoes, roasted broccoli

    chicken piccata and steamed asparagus

    breakfast for dinner (scrambled eggs, toast and fresh fruit)
  • tonight- chicken kiev (line 9x13 with dried beef--sounds gross but is actually good with chicken breasts wrapped in bacon, covered in a mix of sour cream and cream of mushroom soup, bake for 2 hours) over whole grain rice and green beans

    tomorrow- stuffed shells

    Wednesday- leftovers from tonight

    That's all I've got so far :)

  • Seared (than broiled chicken) over salad (we then use the extra chicken to make chicken salad sandwiches for lunch)

    Pasta with sausage

    Carribean  black beans and rice

    Beef Stew (always nice to do a crock pot meal and we get two meals out of it)
