Black Beans, what do you do with them??

So, I ended up with two BIG bags of black beans... and I have no clue what to do with them.

Are black beans usually a side dish? Or can you use them as an entree or a soup?

What do you do with random black beans?!

Somebody, please, help a sistah out.

  • Don't like them at all, but aren't they used in a lot of Mexican dishes?  Maybe google Black Bean recipes or something.

  • We do all kinds of things with black beans (we don't eat a lot of meat).

    Enchiladas, burritos, soup, and quesadillas are our favorites.

    We also make black bean patties in place of hamburgers.

  • Black bean soup - but I think its weird.

    You can use it in tortilla soup - but I think its gross.

    Side dish, or burritos...

    Basically I don't like beans. But there are TONS of recipes :)

  • Rice!!!! I cook BS chicken breast with it and then add salsa and sour cream. It's SO good. When I was growing up my Mom would make black eyed peas with rice and chicken, we would add fresh tomato and sour cream. When I started cooking I made it with black beans and salsa as a subsitute and it's SO yummy. It's actually one of DH's favorite meals.

  • Last month's food network magazine had a FABULOUS recipe for black bean soup. You can check the website and see if you can find it.
  • You can treat them like you would meat in a lot of dishes.  I make bb soup, bb and butternut squash quesadillas, black bean burgers, serve them with mexican rice and melt cheese on them, or use them as a side dish.  I have a friend who makes SBD brownies out of them, too!
  • You eat 'em up!  I love BEANS!!!

  • I love just a plain black bean and cheddar quesadilla with sliced avacado and sour cream on top!!!  Yum!

    • 1 tablespoon olive oil
    • 1 large onion, chopped
    • 1 stalk celery, chopped
    • 2 carrots, chopped
    • 4 cloves garlic, chopped
    • 2 tablespoons chili powder
    • 1 tablespoon ground cumin
    • 1 pinch black pepper
    • 4 cups vegetable broth
    • 4 (15 ounce) cans black beans
    • 1 (15 ounce) can whole kernel corn
    • 1 (14.5 ounce) can crushed tomatoes

    Directions

    1. Heat oil in a large pot over medium-high heat. Saute onion, celery, carrots and garlic for 5 minutes. Season with chili powder, cumin, and black pepper; cook for 1 minute. Stir in vegetable broth, 2 cans of beans, and corn. Bring to a boil.
    2. Meanwhile, in a food processor or blender, process remaining 2 cans beans and tomatoes until smooth. Stir into boiling soup mixture, reduce heat to medium, and simmer for 15 minutes.

  • For burritos we usually just heat the black beans and throw them into grilled tortillas with rice, cilantro, tomatoes, zucchini, cheese and sometimes corn.  Top with salsa, sour cream and/or guacamole. SO quick and delicious. One of our go-to meals!

  • We always use canned, but we eat a lot of black beans.... we looove them on tacos or in burritos/quesadillas - we usually just pour the whole can in a sauce pan, add chipotle seasoning in, some chili powder, and some lawreys seasoning salt and let it boil down until the liquid is mostly gone. Then they're a little spicy and deelish :)

    I was sort of at a loss as to what to do with these big bags of beans, but since I AM from Texas, and I DO live right outside of Austin, I SHOULD be able to do SOMETHING with them (excepting Neon's craft idea, that is).

    :) I am excited to do some bean-er-riffic things next week! I figure...whatev... I've got gas anyway, right? :P

  • We use them for black bean chili, as a filling for burritos and for basically just a side with a bit of cheese.

  • I like to have black beans as a side dish with rice.  I also cook black bean in the rice itself sometimes. 

    If you cook it as a side dish - realize that dry beans need to be boiled a very long time - that is why I use canned beans (I know, may not be the healthiest choice- beans is the only thing I eat from a can).  I remember my mom used to soak the beans (black or kidney) in water over night before cooking them the next day.

    It's so they don't get grainy when you cook them. And so that they are easier to cook, you do it with certain types of lentils too. :D

  • Black bean cornbread pot pie is my go-to.  It's like a very veggie-filled chili baked with cornbread covering the top.  It's really simple but the recipe is longish because of the seasonings/ingredients, so just PM me if you want it and I'll send it over Smile
  • Dried black beans? I have the best recipe for a black bean salsa.. sounds weird, but so good..you can eat it solo or with tortilla chips or crackers:

     

    1) soak one back of blackbeans overnight

    2) rinse the beans, and place in a pot with a couple cloves of chopped garlic and half a red onion diced. Bring to a boil, then simmer until beans are tender, but with a bit of a bite; al dente. (usually 45 minute works)

    3) drain beans, rinse, and let cool. in a separate (big) bowl, mix the other half of the red onion chopped; one can of corn; one can of crushed pineapple;  2 teaspoons lemon juice; 1/8 teaspoon red pepper flakes (this is sorta to taste.. add more if you like a kick, less if not); and a bunch of chopped cilantro (not sure how much.. I just know I love the flavor, so I tend to put in a good few handfuls).

    4) Once the beans have cooled, add them to the bowl and mix well. You can serve it room temperature or cold.
