Easy dinners please

I need suggestions/recipes for easy dinners.  I just went back to work part time and the days I am working dh is home.  He is able to cook, but needs things that are easy, not too detailed.  Any suggestions? 

Simple slow cooker would be good too.  Thanks!

  • I make a really quick chicken dinner and it's easy too.  Boneless skinless chicken breasts...sliced in half to make them thinner.  I use plain breadcrumbs and add my own spices (but you can use Italian and just add more garlic, etc.   Coat the chicken (don't dip in anything except the bread crumbs).  Have olive oil hot in a non-stick skillet.  Brown on both sides.  I add white wine (but you can use chicken broth) and "cook" on med-low for about 15-20 minutes (covered).  I then add veggies (broccoli, cauliflower, mushrooms, potatoes (canned sliced) and heat until hot.  You can make this in advance and reheat if you want.  Serve with a salad or another veggie.

    Chili does not need to be cooked ALL day.  A quick way is to use the Brooks hot chili beans and stewed tomatoes.  You can add macaroni noodles too if you like (last minute...or cook separate and just put chili on top of them).  Noodles tend to get mushy.

    Crook pot...roasts are easy...just add peeled whole or halved potatoes and carrots.  A meal in one pot.

  • We do breakfast for dinner and soup and sandwich or salad for dinner each week.  So easy and everyone likes it.  I really only cook 2x a week and I try to make doubles those nights.  I make casseroles sometimes so that I can just throw them together the night before or when I get home and go do other stuff while it's cooking.  I make a big salad on Sunday, keep it in tupperware with a paper towel on top and we eat from that all week.  We have a couple easy to prepare meals like frozen ravioli, frozen burgers that DH can grill if he gets home early, etc.  Love rotisserie chickens and you can turn them into so many other things.

    CleoKitty posted this one a week or so ago. It was super easy, and excellent! And it made tons of leftovers, so I used it to make enchiladas and shredded barbecue chicken sandwichs.
