Beef tips or stew meat. Put them in the crockpot with a can of cream of mushroom soup and a can of french onion soup and some Worcestershire. Cook on low all day. I add peas towards the end of the cooking and serve it over egg noodles.
I make fish taco's all the time with Talapia and soft shell tortillas. We just top them with a shredded cabbage mixture, black bean and corn salsa, and avocado and tomato mixture.....healthy and gooood! Plus, DD then gets a good serving of fish!

Do you like mushrooms? We do grilled or baked stuffed portabellos a lot. You can stuff them with all kinds of stuff ... mozzarella, artichokes & garlic, spinach & feta, peppers & Monterey jack, etc.

Someone on here (can't recall who it was) had a one pot rice dish she mentioned - which I made and loved..... had rice, beans, corn & salsa - top it with cheese & sour cream. It was so good!

Tacos, beef stew (slow cooker), shepherds pie, spaghetti.. All super easy!
ETA: For the stew, we usually throw a beef roast in the crockpot with red potatoes, carrots, celelry and mushrooms, with red wine.
My favorite meat dish is Boliche...it's basically a Cuban pot roast. It's made in a pressure cooker with potatoes, tomato sauce, and seasoning.
You could always do tacos or a veggie lasagna.
