I need lunch ideas!

what do you gals normally do for lunch? I always try and bring my lunch to save money, which used to be all kinds of yummy sanwhiches....but now that I'm pregnant agian, I'm laying off the lunch meat. I know you can warm it up but I hate warm lunch meat. And I can only eat so much tuna before I get sick of it. We usually don't have any dinner leftovers to bring in either. So help me out please and give me som inspiration! Thanks!

Re: I need lunch ideas!

  • Especially when I was PG we would make extra at dinner time so I could have left overs the next day.  I was too tired to make lunch in addition to worrying about dinner!  Wink

  • I'm having a hard time with this too (although I can still have lunch meat).  I ate the same thing every day for years and now it just doesn't sound that good anymore so I'm looking for new ideas.

I mostly do soups and salads.  You could do chicken on the salads for protein.  I also like the morningstar products, especially the black bean burgers.  I got some falafel from costco that heats up in 1 minute, and it's pretty good with pita, some veggies, and hummus.  Or maybe make up some pasta salad on the weekends?

You could also do veggie and cheese sandwiches.  There's a bagel place here that does a really good veggie sandwich with cream cheese, regular cheese, red peppers, tomato, etc. on it.

  • I bring lunch to work most days too.  I do it mainly to offset the cost of my DH going out to lunch every day.  Ugh.  Anyway, its sad to say but I eat a LOT of lean cuisines and lean pockets.  They are not that great for you but they are cheap, easy and quick.  I try to make enough dinner for leftovers whenever possible.  Also, when we grill or bake chicken, steaks, or salmon I will throw an extra in there and then slice it up and put it on a salad the next day for lunch.
  • I ate a lot of soup and salad (but you I guess you can't used bagged lettuce for the same reason you can't have lunch meat now).  I would sometimes get a chicken sub from subway b/c it wasn't lunch meat and was heated up.
  • Lean cuisines are mostly what I eat.  Sometimes I make salad and cut up cheese and hard boiled egg and put it in.  And once in a while I bring PB&J.
  • Sadly, I mostly do sandwiches, and often do PB&J. Once a week I make myself a salad with hard boiled egg in it. When I was pregnant, I tried to always have leftovers to bring as an alternative to sandwiches. I also had a can of lentil soup once a week usually too.

  • I do a lot of prep work on weekends like grilling chicken breasts, cooking bacon, boiling eggs.  With that i make a lot of salads, cobb salads, just chicken or tuna on a salad, egg salad.  Also, I like fresh Mozz & tomato/roasted pepper sandwiches or hummus and veggie sandwiches.  Peanut butter and apples, frozen meals, or left overs.
