Oooohhhhh, we may have to try this, too... DD used to be great with veggies, but she's been on a veggie strike as of late, and this sounds like a great way to sneak some in!
One of her long-time favorites is the apple turkey loaf recipe from this page: https://www.wholesomebabyfood.com/babyfingerfood.htm. In addition to good protein from the turkey, it has some applesauce, carrot puree, and wheat/oat bran in it! It also freezes well, so I usually make a double batch once every month or two, and then we always have a quick lunch or dinner handy.

When I make these kind of things I make them in bulk and freeze them so less effort. Especially the cookies, they probably freeze well along with the mac n cheese.
