Butterbeans

Ok

whipped cream -

1c heavy cream, 1teasp vanilla (if you use the mccormick, an overflowing capful works LOL) 1/4c granulated sugar (or to taste).  Beat til it forms soft peaks.  Metal or glass bowl, beaters and bowl must be cool or cold and very dry.

Strawberries -  1quart - slice 'em up, put about 2tablespoons - 1/4cup granulated sugar on them, set aside so they get gooey.  Give them 30-60min, mix them up once or twice while waiting.

I use bisquick so it's not EXACTLY scratch but hey.

2 1/3 c bisquick, 1/2cup milk, 3Tablespoons granulated sugar, 3Tablespoons melted butter

Mix all, drop by spoon onto ungreased cookie sheet, bake 10-12min or until golden-ish.  At 425.

This makes about 6 shortcakes depending on how big your spoon is ;-)

  • ugh wait when I say "mix all" I mean the bisquick stuff.  LOL  Mix the bisquick, milk, 3T sugar and 3T butter, drop, bake. 

    Then assemble by topping w/the strawberries & whipped cream.

    You can even crumble the shortcakes and layer it all in champagne glasses ;-)

  • kori--that's exactly how I make strawberry shortcakes as well.....I love the bisquick ones!!!!  They are on the dry-ish side so they soak in all the strawberry juice so well!

    yummmm-o.  I will be making these sometime this week now!

  • ha I would too if I could find any strawberries that look good!  Well, that & my oven goes nuclear on us.  I HATE baking with electric. So so so sucky.

    I think I'm bringing it to pass at SIL's grad party Sat, though.
