Manicotti......although it SEEMS labor intensive - SOOOO easy!!!
Cook noodles (I do the big shells since they are easier to fill. Or you can opt for the manicotti tube noodles). Drain and cool. While noodles are cooking, combine, one container of ricotta cheese, almost 2 bags (3 cups) of shredded mozarella cheese, one egg, some parsley and about 1/2 cup of parm. cheese. (This is your stuffing) When noodles are done, stuff the shells with stuffing and place in baking dish that has a bit of sauce in the bottom so they don't stick. When done stuffing, spread the rest of sauce over shells/manicotti, then the rest of the moz. cheese and some parm cheese too. Bake at 350 for 50 min, covered, then remove cover for 10 min.
The stuffing of the noodles is what takes the time plus the baking but I have whipped this together on my lunch hour before and then put in the fridge for that evening to just pop in oven. It is easy and seems like a gourmet meal (PS, also good for giving to people to freeze and whatnot) Also, I am not a HUGE fan of ricotta chese but with this recipe, it tastes like cheese, not the gritty cheese crap.
Saute peppers, onion, garlic & 1lb ground beef (or turkey) then drain. Add salt & pepper & one can of tomato soup, simmer for about 10 minutes. Cook about 1/3 lb of elbow macaroni. Mix the elbows with the ground beef mixture and top with shredded or grated cheese.
I make "lazy man's manicotti" - my spinoff of the regular stuff. Stuffing the shells or tubes is a PITA so I just mix it all up like a casserole instead. I use ziti or penne for the pasta, make the rest of the stuff as in the recipe above and just mix it all up and bake it like a casserole. Everyone loves it! I'm all about making things simpler.

Tacos are always an easy one for us. I just do tomato, avocado, shredded cheese, & lettuce for toppers.
