Chinese Chicken Salad Recepie

Anyone have a favorite Chicken Salad Recepie?  DH is asking for that for dinner tonight!  Of course I'll make it if I can get him to eat veggies.

I have a great salad dressing to recommend.  It's by Soy Vay (they have some great tereyaki marinades) and it is called Cha Cha Chinease chicken salad dressing and marinade
