NTR: do you have an easy chicken recipe?

I have a bunch of boneless chicken breasts to use up and am trying to make something different. Do you have a good recipe to share? TIA!

    Then place in a casserole dish, coat with marinara and mozzerrella and voila!  Chicken parm.

  • Hawaiian Chicken...

    Ingrediants: 4 chicken breasts, 1 Lawry's Hawaiian Marinade, 1 large can chunk pineapple in juice. 

    Lightly brown breasts in a little olive oil on stovetop.

    Pour in marinade and pineapple.  Simmer until done.

    Simple, fast and delicious!

    I usually serve with rice, veggies, biscuits.

  • A variation on the dip & fry -

    Use nonfat/lowfat plain yogurt (vanilla in a pinch) in one dish, I think it's about 1/4 c flour & 1/2 c breadcrumbs add salt, pepper, thyme (sometimes I add parmesan or rosemary).  Dip in yogurt, then breadcrumb mixture.  Bake about 7-8 mins at 350.  Meantime, melt 2 T butter THEN ADD 2 T hot sauce (whatever kind hot or mild you want, just don't heat it).  brush the chicken with sauce mixture, flip over & brush the other side.  Bake for another 7-8 mins on the second side. 

    Sorry, we've lost the recipe so we just kind of go with it :)

     

  • Another one, simple, maybe not as exciting:

    Saute chicken in chunks in sauce (whatever flavor you like or try french or Italian salad dressing).  Take Pillsbury crescent rolls, break into the triangles.  Arrange the fat parts of triangles in a circle, overlapping.  Spoon on the chicken and cut up veggies.  Sprinkle cheese over the top.  Fold the crescents over (so it becomes like a ring or filled bread).  Bake according to the crescent roll package. 

  • chicken caccitori (chicken, diced tomatoes, tomatoe sauce, onions, seasoning...simmer in crock pot for 8 hours on low w/ 4 chicken breasts) ...place over pasta or rice!

     

  • cut up chicken in bit size pieces. In a pan w/ olive oil saute carrots chopped into small round slices about 3-4 min. put chicken in pan and cook until done. Add one tub of pesto sauce and let simmer for a couple min. Serve over thin spaghetti. Drizzle w/ a little olive oil and put as much parm cheese on top as you want. Easy and yummy. Smells great.
  • Chicken Stir Fry:  cut chicken into cubes or strips, season with garlic powder, pan fry, add veggies (onions, peppers, etc), add soy sauce

    Chicken Quesadillas:  cut chicken into cubes or strips, season with garlic powder and lemon, pan fry...put sharp cheddar on soft torilla, add chicken, cover with mozzarella and another soft tortilla, bake at 350 degrees for 6-8 minutes then flip and repeat bake...serve plain or with sour cream and salsa

    Popcorn Chicken:  cut chicken into cubes...mix flour, garlic powder, poultry gravy mix, and Lawry seasoning salt...dip chicken cubes into either egg or sour cream and then roll in flour mix, fry, and serve with rice, veggies, or french fries

    Tomato Chicken:  clean and slice chicken breasts, season with garlic powder and lemon, saute in homemade or store-bought tomato/marinara sauce, serve with pasta, salad, and bread

  • Homemade chicken cordon bleu

    Pre-heat oven to 400*

    Butterfly chicken breasts - just make sure they are thin you can also pound them to make them more thin

    dip only one side in flour, then egg, and then bread crumbs

    on the side that has no bread crumbs place either swiss or provolone cheese, then place two slices of ham, and then one more slice of cheese on top. 

    Roll them and hold together with a tooth pick

    place them in  a baking dish with butter enough so that they do not stick

    Bake for 30-40 minutes depending on the size of the chicken
