Monday Meal Plan - Week of 5/22

I find that I stick to a weekly meal plan better if I write it down. Plus I often find meal suggestions from others on here.

What's on the menu for this week, mamas?

Re: Monday Meal Plan - Week of 5/22

  • M - Chicken Taco Casserole
Tu - Leftover Baked Spaghetti (from the weekend)
W - Pizza truck at local bar (most likely)
    Th - Pork Tenderloin Roast

  • Instead of having cabbage rolls, we made a cabbage roll casserole. It was super good and super cheap, also super easy!
  • @erindippity I love cabbage roll casserole and they are healthy too (I make with ground turkey). I also make a variation that doesn't have cabbage and with ground beef.

Yah the one we made was with ground beef (DH loves ground beef). It called for 1 lb of ground beef and 1/2 lb of ground pork or ground sausage, but we just did all beef. What did you use in place of the cabbage?
  • @Nxy  I had some Annie's mac and cheese last night. I like to pretend it's classier than Kraft, but then I remember I bought the "Bernie's farm" box and remember I'm eating children's food.

  • @Nxy just toss some hot dogs in one day, smoked sausage the next, and broccoli the next, etc and call it good.

  • @Nxy Dh and I ordered dominos last night.  No judgement here, mac and cheese is awesome!  I had kraft mac and cheese the night before.  Our cooking game has been thrown way off!  We will probably grill tonight, cus the sun is out, but the rest of the week will probably just be us making something random!

@erindippity I don't think I've ever had cabbage roll casserole but now I think I want it! Do you have a link to a good recipe?

  • @OTmom3 I got the recipe from the Spending with Pennies page on Facebook! https://www.spendwithpennies.com/unstuffed-cabbage-casserole/

Here's a link to the one I used. I love the videos and recipes that the page shares.
