Food list Friday 8/19

Here it is! The place to share your meal plan for the coming week, what's filling out your grocery list, a new recipe, or your favourite freezer meals. 

Basically, a place to save us all from eating pie for every meal. Or plan what kind of pie we are having for every meal.

  • Oh I miss meal planning. Sometimes I have a dinner in mind and then by 4 the idea of that very meal makes me gag so I wind up eating a baked potato and H and DD are on their own. I don't think I've had any kind of chicken since 6weeks. I have tons of 2nd tri energy, my house has never been cleaner, now if the food aversions could go away I'd be happy.

    Oh, I make the cheesey chicken without chicken too and eat it with sausage or hot dogs or something along those lines- for those of you not eating chicken right now
    Edit: if you cut out the chicken take the cheese down to 11 or 12 ounces

    Yes. Ground beef only here too, not even steak. It's been lots of enchiladas, dirty rice, tacos, and meatballs around here. But I can't cook it. I can't be in the house while its browning at all the smell makes me so sick.

  • We had broccoli quinoa casserole last night. Easy to make and my whole family loves it. 

    10 oz. condensed cream of broccoli soup, 1/3 c mayo, 2 T milk, 1 1/4 c shredded cheddar plus more for the top (I use a 2 c bag), 1/2 t sugar, 1/4 t pepper, dash nutmeg, 2 c cooked broccoli (I use a big bag of frozen chopped broccoli), 1 1/2 c cooked quinoa

    Cook quinoa: combine 3/4 c quinoa, 1 1/2 c water, salt. Boil. Reduce heat to low, cover and simmer 18 minutes. 

    Oven to 350. In large bowl combine soup, mayo, milk, cheese, sugar, pepper, nutmeg. Stir in quinoa and broccoli. Transfer to casserole dish. Sprinkle with extra shredded cheddar. Bake 40 minutes. 


     
  • You could easily add chicken, but I can't eat chicken right now. And quinoa is a protein so it works out. 


     
  • M - Grilled Pork Chops, corn on the cob, mixed veg.
    T - Steak, Roasted garlic potatoes, broccoli
    W - Spaghetti, side salad, garlic bread
    T - Shrimp and veggie lo mein (onion, bok choy, carrot)
    F  - Chicken tacos

    I begrudgingly put chicken on the list. It really sounds dreadful so I'm hoping the liberal taco seasoning will make it edible.

  • Tomorrow we are having chicken Caesar pasta salad. I don't measure anything so sorry about the approx measurements!
    Cube and cook a chicken breast and 3 strips of bacon, put in the fridge to cool. Cook your pasta (penne, rotini, etc.) then drain and put it with the chicken and bacon. Once the chicken, bacon and pasta have cooled to atleast room temperature mix in a large bowl and add in your salad, about 50/50 salad pasta mixture (I buy the bags of Caesar salad.) Then add your dressing and serve.

    I add tomatoes in with mine because my husband doesn't like them. You can add as much pasta or salad mixture as you like. My husband loves it heavy on the pasta so I add more than the lettuce to his bowl.

  • Usually we are meat-less everyday and our meals resemble some sort of veggie and quinoa dish but I've been needing the meat lately! Trying to keep it minimal. 

    Monday- Cajun chicken and rice
    Tuesday- Vegan chili
    Wednesday- baked ziti
    Thursday- Potato and Corn chowder (took this from the fall food thread)
    Friday- Roasted Chickpea wraps
  • Ok here's mine so far:

    Monday: pulled chicken sliders with corn on the cob

    Tuesday: black bean enchilada bake

    Wednesday: white bean and ham soup with biscuits

    Thursday: chicken fried rice

    Friday: pizza

    Weekends are free for all with any leftovers we might have.  I like to leave weekends open to try out more time consuming recipes as well.

  • The only food plan in place thus far is for tomorrow. It's going to be baked salmon, corn, and steamed potatoes. The rest of the week we're kind of winging it(although we'll probably have left overs on Tuesday). Hubby and I haven't exactly been meal planning since my appetite is still so up and down.
  • So I had a busy weekend so I just made my list for the week:

    M - Sloppy joes, rice, green beans

    T - Spaghetti

    W - One pot red beans and rice

    T - Chicken Enchiladas (making 2 pans 1 for a freezer meal)

    F - Out

  • I made meatball soup this weekend bc I had a craving. no idea what we'll eat the rest of the week but I have asparagus so...
    m- meatball and vegetable soup (leftovers)
    t- asparagus and feta orzo pasta (I know we're not supposed to have soft cheese, I'm willing to risk it)

    no idea beyond that...
  • @Gretchypoo asparagus and feta orzo pasta sounds delicious! Is there a specific recipe you use? Also, I've been able to find pasteurized feta at my grocery store. It's Apetina brand. But I have definitely eaten non-pasteurized soft cheeses, knowingly and unknowingly...

    I boil the orzo in salted water and just quickly sautee the asparagus in olive oil with some roasted red pepper flakes. then I dump it in a bowl with the drained pasta, a whole container of feta and squeeze 1/2 a lemon over the top. 

    it is amazing and super easy.
