Had a change in our meal plan and I wanted to share because it was simple and delicious! I took 3 frozen chicken quarters (thigh/drumstick) and put them in the bottom of the crockpot. I drizzled them with olive oil and liberally sprinkled them with paprika, salt, pepper, onion and garlic powder. I topped the chicken with 1 sliced onion and 4 foil wrapped potatoes. I put it in the crockpot on low around 730 AM (before work) and we didn't eat until close to 6. It was juicy and wonderful. I just heated up some frozen veggies to go with it and everyone is happy. Bonus points as it's ingredients that we almost always have on hand. I was just not in the mood for bean soup. The corn bread was still on point though!
This thread though. I'm making this southwest chicken bake tonight-super easy, just chicken breast, salsa, sour cream, tortilla chips and cheese. YUM. Leftover Italian sausage and bean soup tomorrow, and marinated chicken breast and garlic potato wedges on Friday. I'm usually not a meal planner but we're having company this weekend so I have to go to the grocery store in a bit.
Monday-Chicken and Broccoli casserole with salad Tuesday- Western Burgers and fries Wednesday- Chicken and Broccoli stir-fry with potstickers Thursday(tonight)- I'm craving some fried chicken, bacon green beans and maybe mac N cheese Friday- I have no clue yet lol ( open to suggestions)
