Dinner alternatives.

when it comes to dinner I'm not always in the mood for meat or chicken , which I haven't really been in the mood for lately but I feel when I don't eat it I don't really get full or if I do I find myself hungry again in a couple hours .

What are some thing's that you ladies are making for dinner that doesn't involve the two or just not a lot of it ?
Looking for some possible dinner ideas for the week maybe =P~

  • Tonight I took a pork tenderloin and put it into a pan with rough chopped carrots, potatoes, and onions, plus a few cherry tomatoes. The veggies outnumbered the meat. Seasoned it and put a little bacon grease in it, covered it and baked it in the oven. Would've been good with some cornbread but I was out of eggs.

    Then I had cake lol.
  • You could make a veggie stir fry, some soups, we like to do a salad night where we have tons of veggies and pile it up and top it with our fave dressing.
  • I made a chicken alfredo baked ziti tonight. I know it has chicken, but it's mostly pasta. I used precooked chicken strips and a jarred alfredo sauce too, which made it a lot easier! LOL

  • You can do a lot with beans and lentils. Tarts are really good, squash, onion herbs and cheese in a pie crust served with a salad... Or falafles on pita bread with feta, tomato, cucumber and tatziki.
  • I second on the beans...theyre a really good option. There are some good enchilada recipes that are bean filled. In my first tri I wasnt much for meat and I did beans as a meat filler often.
  • I'm big on egg salad sandwiches this pregnancy. You can also do eggs in a quiche or something?
  • Breakfast for dinner! Eggs any style. Pancakes. French toast. Potatoes. Omelets with veggies.

  • I was like that with my first and found hiding meat in casseroles is better than just serving it with sides. As the others have said beans, eggs and cheese are great options too.
  • Homemade pizza! I found a delicious crust recipe that was so simple on Pinterest. Look me up as Anna Wiebe. Ithink my profile pic is b&w. It should be on my Nummy board!
  • I like to put a roast in the crockpot and let it cook all day and cover it in bbq sauce and have bbq bake potatoes. I know it involves meat but this meal is a hit at our house.
  • We like zucchini sauteed with spices and/or onions, topped with stewed tomatoes. We usually serve on top of rice with a little cheese. I mentioned it to DH, as in we haven't done this in awhile and he's going to go buy the ingredients today hopefully
  • Black bean tacos are yummy! Maybe fish (although I'm not a big fan). Lasagna or other casseroles.
