OT leftover ricotta?

Super OT but... I had leftover ricotta with an egg mixed in that is sitting in the fridge... probably for 3 days. Still good? I mean... the egg isn't expired... the ricotta isn't expired... and yet I'm still nervous. @MapleMe I'm looking at you!

    I was going to say that I would bet it's okay, if you're using it in a cooked dish.  I wouldn't use it raw.  But as long as you are heating it to very bubbly, and probably, like, today, I would bet it's fine.  But I wouldn't trust me, I'd wait for @mapleme's official ruling.

    Ricotta is so weird. I always have some leftover too. The small container is too small, then the next size up is big enough to feed an army

    Could you make ricotta from a non-dairy milk?  Or will only dairy milk curdle properly?

  • DH has gotten into making ricotta lately,then using the leftover whey to make pizza crust. Then we've put the ricotta on the pizza, either with reg sauce or pesto. Mmmmmm, all so yummy.....

    Jess & Adam, married 2009, precious Audrey born in 2011. BFP 1/6/13, 6-wk MMC discovered at 9 wks 2/11/13. D&C 2/18/13, second D&C 4/23/13 for retained placenta.
    BFP 8/24/13!! EDD 5/1/14, delivered healthy and sweet Zoey Leanne on 5/5/14 by repeat c-section.

    Super informative! I'm tucking that info regarding a week after the egg is cracked for later! Also, how much vinegar do you add to make ricotta? Does it matter? Oh, and you'll be sure to let us know first when you go into labor right? Before you husband and OB?
