I'm not much of a baker. I want to make LO some muffins out of oatmeal that are healthy. Every recipe I googled has all kinds of sugar & butter. I don't want that. Im looking for something simple & healthy. Any ideas for the baking illiterate?
2 1/2 cups rolled oats 1 tsp baking powder 1/2 tsp kosher salt 1tsp cinnamon 2 Tbsp butter, melted and cooled 2c milk 1egg 1/4c maple syrup 2c fruit fresh or frozen (I use frozen mini blueberries)
In a bowl combine oats, baking powder, salt, cinnamon. In another bowl whisk wet ingredients. Combine wet and dry ingredients. The batter will be very wet. Bake until golden 25-35 minutes on 375. (I make them mini muffin size.) Store muffins in refrigerator. *This recipe makes a lot of mini muffins so I keep them in the freezer and pull them out a few at a time.

thought these looked cute/good.. not sure if the pic will show up but
they are called pancake bites..it says to use a mini muffin tin and to
mix together any pancake mix and fill each one 3/4 full and then top
with whatever you want, berries, choc chips, spices, plain and bake at
350 for 12 mins.
