Toddlers: 12 - 24 Months

dinners

So I have breakfast and lunch covered! But dinners I seem to struggle with a bit.

I need ideas! DD has had it all, besides red meat, but I will introduce it to her- we do chicken and fish a lot.

casseroles? other ideas that LO really enjoys that you can make- lay it on me!!

  • Dinners they eat whatever we eat. So any kind of meat, seafood, pasta, ethnic foods, etc. My kids love rice, veggies and protein that's either asian or indian influenced

    Last night was chicken, pepper and zucchini shishkabobs.

  • Same as the others, though sometimes I just can't get it together enough to make a meal for the whole family (we both work full time), so then he'll get pasta, or a sandwich (cut up small), or breakfast for dinner, or whatever I can just throw together that has at least some veggies and protein.

    My son loves whole-wheat twisty pasta and elbow macaroni, usually baked with ground beef, low-sugar sauce and mozzarella cheese. He also likes turkey sausage with the casing removed, usually served with cooked green peppers, sometimes with pasta sauce. He also loves refried beans and rice and deconstructed Mexican fare (we give him little piles of the guacomole, diced tomatoes, shredded cheese, seasoned chicken, etc. the tortillas are harder for him to eat)
  • If we have nothing prepared and we're in a rush, we go for omelettes with veggies and cheese, or even some cut-up bits of ham or lunch meat.
  • DD eats whatever we are eating for dinner.

    Some of her favorite meals include:

    Greek spinach quiche
    Black bean burgers
    Meatloaf
    Spaghetti and meatballs
    Chicken tacos in the crockpot
    She loves anything with beans.
    She loves corn on the cob.
    She loves hummus.  Usually I do hummus for lunch but if I can't get her to eat her dinner I usually offer her hummus and veggies.

    DH and I both work full time also.  One thing that has really helped is cooking at night after DD goes to bed.  It's exhausting because the last thing you want to do at night is cook but it makes the next day go so much easier.
    I also use the crock pot a lot and I will also make stuff and freeze.  For example, I made a spinach quiche last week.  I made two so we ate one for dinner the next day and the other one I froze for another day.  I do this with meatloaf, meatballs, chicken cutlets, veggie and black bean burgers, etc.  I like to always have a meal or two in my freezer ready to go if I'm ever in a pinch for dinner.

    I do the same thing.  Mostly because my child has some sort of internal clock that goes off after daycare that tells him without food in the next 2 minutes he will surely die.

    He eats the same thing we eat.  He doesn't like spicy foods though, so if we're eating something with chipotles or chili sauce I make him a tamer version.  He has a soft spot for beans and mexican, so we incorporate one or both of those in meals in a weekly basis.  Tortilla pie, tacos, pupusas, tonight we're having blackbean, pumpkin, and goat cheese tamales.

  • i make meals and freeze them.  Chicken Spinach meatballs, regular meatballs, Spinach Quinoa Patties, etc.  Whenever I am in a jam for time he gets something out of the freezer that is premade.  I also make extra pancakes and freeze them so we can do breakfast for dinner.  I make Carrot Cake Pancakes and Beet Pancakes from Weelicious. 
  • my other big obstacle is she won't eat what DH and I eat. And I don't want her to go hungry- I used to be able to fall back on formula. not anymore!
  • Ditto everyone. The kids eat what we eat.
