Dads & Dads-to-be

Bacon meat loaf.

So, the wife put me in charge of making dinner, said she wanted meat loaf. 1 lb beef, 1/2 lb bacon pieces n bits, 2 1/2 pieces of bread and 2 eggs. Seasoned with some garlic sea salt, Worchestershire sauce, and about 1/3 cup of dried minced onion. All mixed together and baked into the "loaf" instead of wrapping the bacon around which I've seen before. Ermahgerd, Yummeh.

  • I am not a meatloaf fan at all, but I have to admit this sounds pretty good.

  • The Worchestershire sauce really keeps it from drying out.

    I've had a lot of trial and error perfecting my meat loaf skills. I used to hate meat loaf when I was a kid. I also use Tomato paste, instead of Ketchup for the topping. Next time, I think I'll tr a dry top. Sierra Nevada Torpedo IPA went reeeeeeaaallly good with that ;)

  • My mom makes really good meatloaf, she uses oatmeal instead of bread crumbs.  I will have to try this version.  I am assuming you cook the bacon first?

  • I baked it all together for about an hour and a half. I've thought about substituting the bread for oatmeal. Makes me want to make more.
