breakfast casserole???

  • 1 loaf of challah (remove crust)

    8 eggs

    3/4 lb of longhorn cheese

    8 oz fat free cream cheese

    2 cups milk

    1 stick butter

    1/2 teaspoon dry mustard

    1/2 teaspoon salt

    1 tablespoon chives

    Directions Tear bread into chunks and place in a well greased casserole dish. Melt the butter and pour over bread. Cut up the cheese and cream cheese and mix it into the bread. Beat together eggs, milk, salt, mustard and chives. Pour over the bread/cheese. Cover and refrigerate overnight. Bake in preheated oven at 325 F for about 1 hour or until the egg mixture is set. Uncover for last 10 minutes of baking to crisp the top.

  • I got this breakfast bake recipe from Kraft Food & Family magazine and we used it Thanksgiving morning. It was SO delicious! I actually used 2 tubes of crescent rolls to make it more doughy.

  • I haven't made this one yet, but plan to over Christmas week sometime:

    1 lb pork sausage, browned & drained

    8 eggs, beaten

    1-8oz pkg crescent rolls

    2 C shredded mozzerella & 2 C shredded cheddar cheese

    1 teaspoon oregano

    *may also add sauteed mushrooms, peppers or onions,  steamed broccoli, if desired*

    Preheat oven to 325 degrees, lightly grease pie plate or 13x9" pan.  Line bottom of pan with crescent rolls & sprinkle with sausage.  In separate bowl, mix eggs & cheeses.  Add oregano & pour into plate over sausage.  Bake for 25-30 minutes or until knife inserted into center comes out clean. 

    It does sound like alot of cheese, I might just use 1 C each of both kinds.

  • 7 slices of bread (preferably french or something crusty), diced

    8 eggs, beaten

    2 cups of milk (whole works better)

    1 pound bacon, fried and chopped

    1/2 medium onion, diced and cooked until soft

    1 package mushrooms, diced and cooked down

    2 cups sharp cheddar cheese

     

    Place bread in the bottom of a casserole dish. Sprinkle with bacon, onions and mushrooms. Top with cheese. Beat together eggs and milk. Pour egg/milk mixture over bread. Bake 45-50 minutes at 350. 

    Its best to assemble this the night before and refrigerate it so the bread soaks up all the eggs. You can change the toppings however you want, too, I jsut like it with the bacon/mushroom/onion combo.
