What's everyone making for dinner this week? I'm trying to fill out my plan to get to the store and feeling uninspired! I just got an instapot and so far I'm not feeling it!
I have an instapot and it sits in my cabinet collecting dust. I haven’t made my meal plan for this week yet. I plan to sit down and do that today so I can go ahead and order all my groceries. This last week I made some delicious meals and my husband actually raved about them. He usually does all the cooking but I have started eating healthier the last several months so I’m cooking more when he works nights.
The 2 meals I cooked this past week was deconstructed fajita and fish taco bowls (so delicious!)
Oh I made our grocery list this morning so DH could go! I’m most excited about this kale “power salad” that we love and have often! Kale, quinoa, sweet potatoes, feta cheese, pepitas, and a spicy avocado sauce/dressing. So freaking good I could eat it for days. On a simpler note, we also will be having a roasted veggie/chicken sausage single sheet pan dinner. Also very yummy (and so easy).
I'm vegetarian, and while it's made me venture into trying lots of new things, I often get stuck in a rut! The last couple of weeks have been so full of rich holiday food and junk food, so I need to reel it back in and go veggie-heavy again... I'll be poking around for fresh ideas (veg-ized of course!)
@Aerialmrs I made some great tofu tacos the other day!
Cube extra firm tofu and press for 10 minutes. While it presses, dice 3 oz pineapple, mince 1 jalapeño and mince 5 cilantro sprigs, mix all those together with a teaspoon of olive oil and set aside for the flavors to marry.
Heat 3 tablespoons of oil in a large pan. Coat the tofu in a bowl with 2 tablespoons cornstarch and cook in the hot oil for 6-8 minutes until edges are crispy. Wipe out the bowl the tofu was in and put the cooked tofu back in. Sprinkle with taco seasoning.
Warm up six 6-inch soft flour tortillas and divide the tofu between them. Drizzle some teriyaki glaze on the tofu and top with the pineapple salsa. Serves two!
Here's my plan for the week. I rely heavily on Pinterest for inspiration. It's so hard to plan now though not know how you're going to feel about certain foods daily.
I just make flatbread dough and then make a cheese sauce for the base and do scrambled eggs, sausage, sometimes hash browns, or pepper/onions on it and then Bake until the extra cheese I put on top melts. Not really all that healthy but it’s so good haha
