Holiday week for those in the US, so maybe less meal planning and more leftovers? Sounds like baked goods are popular this week based on the Random Thread.
DH is grilling steaks and making baked potatoes tonight for a bday meal! I’m making some green beans on the side and bernaise sauce bc I’m obsessed and would eat it as soup if that was acceptable. Birthday calories Do. 👏🏻 Not. 👏🏻 Count. 👏🏻
That should last us 2 nights, and then Im either going to pull out some lamb chops from the freezer, or I got ground turkey on sale at the store today, so when I do I usually make a one pot meal of ground turkey, farro (cooked separately then combined), kale, mushrooms, onion & baby tomatoes with some shaved or shredded Parmesan on top. The key is to put the tomatoes and kale in only for the last 2-3 minutes so they don’t overcook. If you add some garlic, white wine & a few dashes of Worcestershire sauce to the rest of the mix and let it simmer for 10-15 mins, it’s really yum. It’s something we just made up a few years ago, but DH loves it and we can freeze leftovers for extra meals.
DH is also making steaks this week. He has been making a Mexican corn which I am addicted to. Just corn sauted in a frying pan until golden and then sour cream, salt, and pepper to finish. (Edited...I think maybe some paprika or chili as well. A little kick and extra color).
I need to dig around in the freezer and see what is there. Probably some BBQ chicken or quesdillas.
We went to a cookout today and they had crazy amounts of food. I stuck with a hamburger and some deviled eggs with fruit. Just things I knew had been successful in the past. The eclair cake was so good for dessert and different than how I make it.

@conni0205 Oh I forgot about chicken stuffing casserole. That is so good. With cooler weather (less than 90 degrees), it sounds like the perfect fall dish.
So DH put a lot of cayenne pepper in his Mexican corn. It was good, but certainly left a slight burning sensation at the back of my mouth. The little boy was just kicking like crazy afterwards (in happiness or protest not quite sure). Clearly a bowl of ice cream was needed to cool things off!
We have 2 fantasy football drafts this week: tonight and tomorrow night, so we'll be doing either leftovers or takeout. (So excited for football to start!) Thursday we have chicken breast that needs to be cooked. If you have an airfryer, you can cook boneless skinless breast in 20 mins or less depending on size. We've been on a spare the air alert for over 2 weeks and haven't been able to BBQ outside which kinda defeats the purpose of summer If we haven't done Pizza by Friday, we'll probably do that. I have so many tomatoes that need to be used so I'm sure a bruschetta/caprese/salsa/ of some sort will be made.
