  • M: I'm making sloppy Joe in the crockpot and then will put it over a baked sweet potato for dinner (We'll have enough to eat this for dinner at least two nights this week).

    That's all I got for now, we'll probably do takeout Friday or Saturday :)

  • @sugarcoateddonut so I use the carcass from the roasted chicken to make my own broth but any chicken broth will do. You can also boil your chicken in water to cook it and use the water as your broth for the gravy ((that’s what my mom does)). Anyway, chicken broth and add a roux ((flour and butter)) to it to make gravy. 

    My Mom Mom’s Dumpling Recipe
    2 cups All Purpose Flour
    1 tbsp Crisco 
    7-11 tbsp of warm water

    Blend until a dough forms, you may need to add more flour or water if dough is too sticky or dry. Roll out and cut into dumplings. Add to a pot of boiling gravy and boil for 10 minutes to cook the dumplings.

  • Mostly skimming for ideas.  I like cooking but HATE meal planning. (and grocery shopping - I really need to try one of these delivery/pick-up options!)

    My meal planning for this week is apparently Meal = Junk, which is terrible because I have a glucose test this week. Like, I told DH though, me eating ~super healthy~ all of a sudden isn't going to change the test results one way or another, so we'll just deal with whatever comes next.

  • This post is great! I might have to cook this week. Mostly all I've been eating for over two weeks is bagels, apples, applesauce, cereal and bananas. I'm having some strong food aversions and have struggled to bring myself to cook. My poor husband has been living on ramen 😅
  • Basically all meat is a no go for me lately. I puked at the sight of steak last week. Which is making meal planning really hard. We were on vacation Monday and yesterday, tonight we will eat at my moms. And then I have no idea for Thursday/Friday. Maybe one day we will grill and I’ll do roasted veggies and corn on the cob as sides. That way H and DS can have meat and I’ll just eat sides lol

  • @mdfarmchick The roasted chicken came out more bland than expected and a little too dry so I used dipping sauce to make it manageable. My daughter refused to eat it. When you use the carcass to make chicken and dumplings, do you boil the bones and if so, for how long? And do you use the (uncooked) neck too?

  • @s_montgomery oh that’s too bad. Do you have a Dutch oven? Here’s the two recipes I’ve used... just don’t forgot the broth in the bottom of the pan if you do the one without the Dutch oven. I missed that step the first time until the last half of it roasting and it still turned out okay. 


    I cover this one with the lid for the last hour so that the skin doesn’t get too brown. 

    We throw everything ((neck and gizzard pieces, leftover garlic and onions, skin)) in the crockpot and add water. We stick it in on high until it boils and then turn it down to low and let it go overnight. At least 12 hours. A lot of times it ends up being longer because we just strain it off when we have time so it’s been cooking for closer to 20 hours. This will make a dark stock, not a broth ((broth is just bones and water)) and that’s what we use to make the gravy with.

  • I’m impressed at all your meal planning. I feel like I can’t plan ahead bc I don’t know how I will feel that day. So far this week is:
    Sun: chicken pot pie and garlic roasted carrots
    Mon: Mexican takeout (I was supposed to cook tacos but I walked in the kitchen and almost puked, and H really wants Mexican so I told him to just order it)
    Tuesday: ??
    Wed: ?? But I also have to cook for my parents so something simple since my dad is picky
    Thurs: again ??
    Friday: ??
    Saturday: lasagna, meatballs, and a green salad. I’m making the lasagna, my mom is making the meatballs/salad and we’re bringing it to my Bro’s house for his birthday.

    I’ve got to get my plan together for the week. I’m trying to use up some of the things we have in the freezer this week. 
  • @mdfarmchick I’ve actually really been wanting lasagna lately (I usually don’t care for it lol). So I offered to make it. Plus I can make it the way I like it (meatless and not a metric ton of ricotta, like the way my mom makes it). I have been having a really hard time with meat lately so it’s going to be sooooo good I’m seriously looking forward to it (at a time where eating is basically a chore). I just hope on Saturday I still want it 😂
  • @mdfarmchick It's essentially a burger with breakfast on top! I'll probably do bacon, egg, and avocado on mine, and sausage, egg, and cheese on DH's.

  • I am so impressed with you ladies that are still cooking. The most I can manage to cook these days is Mac n cheese, let alone plan a whole weeks worth of meals!

  • Last night I heated up chicken nuggets and fish sticks. And I microwaved canned corn.

    Tonight is Little Ceasar's pizza.

    For breakfast I eat oatmeal, cottage cheese, or yogurt and lunch is always salad. For dinner I make whatever we want. I'll cook when I'm feeling better. DH doesn't do the cooking anymore.

    I need help!  We made a ham, and while the ham was fine, my pregnancy taste buds revolted.  We have 3-4 more meals worth, and I will not throw that much food away.  Any ideas on how I can spice it up to be more palatable?  (I reheated it in mango juice and even that didn't help)
  • @cmoon3 I made a ham at the very beginning of this pregnancy. I don’t really like ham to begin with but it was the only meat I could find at the time (stupid coronavirus and panic buyers). I absolutely could not eat it and I gave some to my parents and froze the rest for maybe a time when I will be able to eat it. If not, H can eat it. 
  • @cmoon3 maybe cut it up really small and add it to wraps with sauce (I'm thinking of a take-out chicken wrap). Or for breakfasts with brown sugar and bacon? Feeding it to your family or freezing it for later on in pregnancy sounded like good ideas too.
  • @cmoon3. Thought about it a little bit more and came up with
    -omelette/quiche/egg bake 
    -some sort of soup with ham like split pea or something? Although it’s about 3672936 degrees outside so idk if you would want soup 
    -I had another idea but I forgot it already. Damn pregnancy brain. 
  • @cmoon3 I agree with the above. Stick that ham in the freezer and enjoy when you are too tired to cook in February 😂
  • @cmoon3 +1 to just freezing it. Also my first thought was diced in scrambled eggs. Sliced for sandwiches. Cubed on salad

    Thanks for the ideas all!  I think we'll freeze, so in the fall DH can make a big (really big) pot of pinto beans and ham!

    Yesterday we ate leftovers, tonight I don't know what we'll have, tomorrow is take-out, Thursday - Sunday I don't have a plan.
    One of those days I'm thinking of making steak fajitas with a side of rice and that bean paste you get at Mexican restaurants. What is that bean paste?

    @s_montgomery - All of our Mexican restaurants serve their meals with a side of refried beans, rice, and a "salad" made of shredded iceburg, tomato chunks and a dollop of sour cream.

    Also, I was totally thinking about ordering Mexican tonight for pick-up.

  • Right. Refried beans. I hate beans but I guess I like them refried.
  • The big kid voted for tacos tonight. And that’s as far as I’ve gotten this week 😆
