I'm making some tasty buffalo chicken dip today. It's been on my mind for about 2 weeks. Today is the daaaaaayyyyy. Not even sure what to dip in it. Might just eat it with a spoon 😂

I am craving pad thai, but I cannot have pad thai. So I took the sauce from this recipe, tweaked it to be lighter on sugars, put it over zoodles and a bunch of raw crunchy veggies and fried tofu, and it was delicious. Bonus: I aced my post-meal numbers so this is an anytime dinner for us!
Subs to lower sugar (because GD): 1Tbsp ACV instead of seasoned rice vinegar 1Tbsp monkfruit/erythritol (1:1 sub to sugar) instead of sugar Zoodles instead of pasta! (Lightly salt spiralized zucchini and set aside for 15-20 min. Don't cook it. Drain before assembling bowls.)
I added a bit more peanut butter simply because we like it peanutty
Our veggies were broccoli florets, julienne carrots, red bell pepper, chives. Our protein was fried tofu but shrimp works well too.
My buffalo chicken dip was ok, very oily from the cheeses. May tweak the recipe. Other than that I'm not sure what to make for dinner this week. Definitely clam chowder though.

Stuck in quote box:. Not sure how you made it, but I use literally the easiest recipe and people go nuts for it every time. I either use drained canned chicken, or boil two chicken breasts and use a food processor to shred it. Then, I use one 8oz block of cream cheese at room temperature, two cups of shredded cheese, and the chicken. Mix in a large bowl. I use Frank's Red Hot Buffalo Sauce (must say buffalo, the regular red hot is way too hot!). I don't measure the sauce, just add a bit at a time until it's the taste I want. Pour into a dish and bake at 350 for 30 mins.
I’ve also been eating a ton of salad. Specifically with red wine vinegar and olive oil. It’s so simple but I just can’t get enough - I’ll sit down with an entire salad bowl and eat the entire thing for dinner some nights lol
Argh I'm stuck again lol! I wish It was warm enough out to fire up the grill but it seems that weather is still several weeks away. Tonight it's beef stew but nothing sounds good anymore.

@alli392 going back on this one, but is there a specific sausage you recommend using for that sheet pan recipe? Sounds good! I’m just never sure what to use when it comes to sausage. Some i love, some have a black licorice type taste and i can’t stand.
