I’m solo parenting so it’s just me and the toddler...so we basically both eat like toddlers while my husband is gone 😂 Also I only “plan” dinner. Breakfast is usually peanut butter toast and yogurt. Lunch is leftovers.
Monday: fish, rice or pasta, squash Tuesday: tacos! And a friend coming over so win win Wednesday: leftovers Thursday: Ro-Tel macaroni and cheese Friday: leftovers. Or we might go out of my mom gets here early enough Weekend: mom will be here so I’m hoping for lasagna!
I try to meal plan, but usually end up at the grocery store every day anyway!
Monday: oven fajitas Tuesday: spaghetti and meatballs Wednesday: something simple like grilled cheese and soup Thursday: enchilada casserole Friday: Picnic style dinner with make your own sandwiches, raw veggies, etc. Weekend: no idea, but hopefully something on the BBQ!

I'm going to love getting some ideas for this, I feel we fall into a major rut of the same stuff. I’ve been terrible at planning lately but did this weekend and will be picking up my online grocery order on my way home after work.

I roasted a chicken last night (mark bittmans roast chicken from NYTimes) so I'll be eating that for a couple of days. I tried making a smoothie this morning and put too much water in so that was a fail. I'm also planning on making some lentil and sweet potato soup on Wednesday. Other than that, I have a container of mint chocolate chip ice cream, lol
Tonight we had leftover smoked pork shoulder. Tuesday- use up the rest of the smoked pork and make tacos Wednesday- chicken, broccoli, salad, potatoes Thursday- H has business dinner so I’ll make Curry cauliflower and lentils because he doesn’t like it! Friday- chicken pot pie pasta Saturday- pizza

I used to meal plan all the time, but now I can only stomach one round of something before it sounds gross and sits in the fridge forever! I've done vegetable soup, enchiladas, deviled eggs, garden pizza. I'm vegetarian, but being pregnant just shortens the list of foods I'll consider even more 😝
