I need some new (healthy ish) recipes. What are your go dinners? Also looking for some new snack ideas. Warning: if you’re feeling particularly nauseous you might not want to read this thread today
@char245 what kind of food do you like and how much time do you have? I meal prep all my food on Sundays and cook in large batches. Before my BFP, I was macro counting very closely. Now, I am still following loosely, so I might have some ideas for you.
My hubby is doing Keto and I eat Keto with him/ crap without him (I.e, m&ms). I usually have really strong food aversions but so far I am hanging in there. We had some really yummy cauliflower fried rice and salmon the other day, and he made this “crack slaw” which is basically the inside of an egg roll in a bowl. It was seriously YUM. The pioneer woman has a killer enchilada recipe, probably one of my favorite foods, I could give a link to it if that sounds good.
Edit: my main snacks are protein shakes and hummus with carrots and pretzel thins.

@southerngirlinwi I like pretty much everything, it’s my husband that won’t eat any seafood womp womp haha. I also have time to prep on Sundays, which I sometimes do. During the week is hard cause I have a two year old so it really makes most sense to get the prep done on the weekends. I don’t know much about macro counting but would love your ideas!

I make black bean and veggie quesadillas pretty often. I sauté peppers, onions, and black beans for a few minutes. I make guacamole and spread it on a wheat torilla. Then I spread th veggies and a little cheese on top and fold th tortilla. Lightly fry for a few minutes on both sides and serve with salsa and sour cream.
I got an instant pot in May and I cook a lot in that. Mostly pinterest recipes. It's so easy! Lately I have been on a salad with chicken kick so I cook a batch of chicken breasts on Sunday in my IP and then it's ready whenever I want it. I also cut veggies so minimal effort is required on my part
Minestrone has been my favorite seasonal thing to make lately... throw in whatever you have and it works! We love white beans, Swiss chard, zucchini, fresh herbs, tomatoes and carrots in ours. I’ll make a big pot and than eat it for lunches with a simple salad

@char245 Okay, so I have a few staples, and they are pretty easy.
First and most obvious, grilled chicken. It is one of the fastest things to prep in bulk and reheats really well. My recent favorite marinade for grilled chicken is nonfat plain Greek yogurt and Indian spices like tandoori, lemongrass, and garam masala. So good by itself or on a salad!
Crack chicken: boneless skinless chicken, a splash of chicken stock, and a package of dry ranch seasoning in a crockpot. Cook on high or low depending on your time constraints. Pour off most of the liquid, shred the chicken and add an 8oz package of reduced fat cream cheese. Melt that in. Add more ranch powder and hot sauce to taste. I like it as the filling of a wrap, but it's also pretty good just by itself.
healthy chicken salad: buy a rotisserie chicken (I get mine from Costco for $5) and pull all of the meat from the bone. Save skin and carcass to make the best chicken stock ever. Shred chicken. Add in nonfat plain Greek yogurt until it reaches a consistency you like (for me it's about 3 cups). Add garlic, salt, onion powder, black pepper, and hot sauce to taste. Add whatever other add-ins you like - for me, celery, sliced almonds, and craisins.
Breakfast egg bake: saute a pound of ground beef/turkey and whatever veggies/spice profile you like in a pan. I like Mexican spices. When cooked through, pour into a greased 9x13 pan. I suggest placing the pan on a lined baking sheet to protect your oven from overflow. Then pour in 4 cups of egg whites and whatever cheese you like. Stir gently to mix everything together. Bake at 350F for 1-1.5 hours, or until golden brown on top and it looks like the center is cooked through. Makes 10 servings.

Quick and easy for me is roasting veggies, love throwing some Brussels on a pan with salmon. Easy Peasy. In the winter one of my go-to’s is a chicken chili I cook in the crock pot.
I love grilled chicken over salad the dressing is- tbs olive oil, tbs of lemon juice, and some salt to taste, I also add this natural spice called sumac optional

@char245 It is!! Refreshing and light! Can’t resist sharing this one too.. I hate potato salads that are drenched in mayo. I found this recipe which actually uses no mayo and it’s Ri-donk-ulous!! IMO
@Shelbyville30 I grew up only eating German potato salad which is similar to the recipe you posted. I remember being so grossed out th first time I had potato salad with mayo.

@chocolatelemons I'm a fan of carnitas. You get a pork shoulder, onion, salt pepper and oregano and cook it in the crockpot for hours. Then let people make their own tacos.
