Meal Plan Monday 6/18

Who's feeling on top of their game this week?  Bonus question:  anyone doing any prep for once baby is here?  I just thought about it over the weekend, but I haven't done anything  yet.  Totally need some ideas!

  • Sunday-Fathers Day BBQ (ribs, some AWESOME mac and cheese I made from scratch, potato salad my sister made, and baked beans)
    Monday-Father's Day leftovers
    Tuesday-BLATs, black bean and corn salsa with tortilla chips
    Wednesday-Baseball (leftovers)
    Thursday-Cheeseburger tator tot casserole
    Friday-Out with friends for dinner
    Saturday-Grilled chicken and veggies

  • We have zero food planning for this week. It's too dang hot here, so I'm surviving on popcicles and whatever cold fruits and veggies are in the fridge. We do have our freezer all stocked with things. Picked up some things from Costco and Trader Joes that just have to be defrosted and warmed up. We also have some other things we've been making along the way. H made like 40 breakfast burritos this last weekend for the freezer too, he made a few different kinds so we'd have some variety. And really I just want to get into them now because I'm so lazy this week.

    We will actually make dinner tomorrow because my boss is in town and I don't have it in me to meet her somewhere so she's coming to my house. Will probably just throw some things on the grill and call it good, the heat is supposed to break after today anyways.
  • I have vegan chili, veggie soup, and a couple of burritos in the freezer. Great idea about trader Joe's frozen stuff...I feel like I can send the ILs to buy some. My mom will do most of the cooking until August but I'm sure we can use stuff after that:)

    For breakfast, I plan on having a bunch of HB eggs made every week, avocados on hand, and overnight oats. Yogurt as well. It's going to be hot! This should all be easy stuff to make in an hour or so on Sundays. 

    I hear bone broth can be good to have in the first PP days so I may pick some pre made up for a quick boost of protein and easy digestion. Maybe at room temp...haha

  • @kissableviv  I have been living on HB eggs this pregnancy. I definitely plan to have lots of those on hand. As well as snacky things like nuts, cheese, dried fruit, and crackers.  I remember not wanting to each much PP with my son.Overnight oats are a great idea!  I love them cold with granny smith apples and cinnamon in the Summer time.

  • @stlmegs I thought I was the only one that liked cold overnight oats! People always act like that's gross around here. With cinnamon and apple, it's like a cookie to me! LOL

    @kissableviv good call on the bone broth! We usually have some on hand, but might not be bad to have some extra around.
  • Overnight oats are so good and customizable! I plan to make some with fresh muddled fruit at the bottom too. Yum! 
    @noideawhatshesdoing I only had none broth once actually! But per the first forty day book it is a good thing to have to ease up the digestive system after labor. We'll see. All I want is a poke bowl!!!

    +1 for overnight oats! So easy to grab and go next day. Pinterest has fantastic recipe combinations to use.

    also starting a list of food i want to prep/cook/freeze for pp. i figure with an end of July due date, I’ll do it after the 4th? When did y’all start meal prepping for after? 
  • @And846 I still haven't!  But I have been buying lots of breastfeeding friendly snacking stuff at the store.  I figure that will hold me over until I am feeling up to eating actual meals again.
