Sunday-We had a few nice days last week but it is STILL cold and gross here, so we made homemade chicken noodle soup yesterday. We were super busy with a bunch of stuff around the house so we made it with rotissere chicken and Reames noodles, but the fresh veggies and herbs we used made it AWESOME. I am pretty excited to have leftovers for lunch today Monday-Oven baked chicken, roasted veggies, cous cous Tuesday-Parmesan crusted tilapia, asparagus, and mashed cauliflower Wednesday-Leftovers Thursday-Mexican turkey skillet Friday & Saturday-Eating out somewhere as we will be out of town

Monday - this lemon rosemary chicken from Trader Joe's - it is SO good. Will pair with some brown rice and roasted asparagus https://www.traderjoes.com/digin/post/spatchcocked-lemon-rosemary-chicken Tuesday - hamburgers with pepperjack and avocado, side salads and maybe roasted cauliflower Wednesday - tacos made with "meatless meat" Thursday - BBQ chicken (hopefully on the grill if weather is nice enough and grill isn't too dirty from the winter months), maybe quinoa or brown rice, and broccoli Friday - ground turkey meat sauce with whole wheat penne, side salads
Maybe typing this out will actually help me stick to this for once!
@zande2016 that "baked chicken" on my meal plan for tonight has turned into a stop by trader joe's on the way home for this specific chicken. I'm using pregnancy cravings as the excuse....

DH is in charge of meal preps because I have suddenly become unable to do anything in the kitchen without spilling. So in an effort to not make a giant mess, I'm planning the meals and he's doing the cooking:
M : Grilled chicken breast, sweet potato, steamed broccoli
T : Spaghetti squash (home grown!) with homemade meatballs and red sauce. We started this already since it is really worth taking the 3 days to make it for depth of flavor.
W: Grilled sockeye, rice, Japanese pickles, steamed greens
TH: Chicken tortilla soup - we've made this one for years and it's good and lets you be pretty lazy because it all goes in a crock pot https://lyndasuttles.com/clean-chicken-tortilla-soup/ we use our own seasonings instead of a packet, but a packet would be easier!
@noideawhatshesdoing saving your sauce recipe! I try to meal plan but haven't frequented this thread...maybe I will to start stalking your guys' recipes!
M- chicken Alfredo with broccoli and garlic bread T- hot ham and cheese sandwiches, chips, veggie W- sweet and sour chicken tenders, French fries, veggie T- meatloaf and mashed potatoes (can you tell I don’t like making this and it just floats around from week to week) taking some of this to a friend so it *must* be cooked F- peach chipotle chicken and rice, veggie S- meatball subs and French fries S- hopefully leftovers, if not then brinner or something my H decides to make.

Monday- Shrimp and broccoli stir fry with lots of garlic and brown rice
Tuesday- Ranch chicken thighs with asparagus
Wednesday- Garlic Honey Pork Loin with broccoli
Thursday- I was going to make an italian sausage white bean spinach dish but my grocery store was out of italian sausage so I bought ground turkey (still accidentally bought the white beans and spinach) idk what I'm going to do with it yet....anyone have ideas? Maybe chili?
@babygagon2018 I think you can make a good soup with those three ingredients! A quick google search of those three ingredients came up with a few options but this looks good:
