When it gets cold like this, one of my fave meals is chicken noodle stew. I call it stew b/c I make it thicker & heartier than soup. I buy a cold rotisserie chicken on sale, cut off and chunk about 1lb of cooked meat. Put 1qt chicken stock in a pan with frozen carrots, chopped fresh spinach, minced garlic, celery flakes, onion powder, a little paprika, and a little Creole seasoning. When the stock is boiling, I add yolk-free egg noodles and the chunked chicken. (No Yolks are my fave brand of noodles for this.) Simmer about 20 mins and eat. Because I don’t use a ton of stock, there are more veggies, pasta, & meat than liquid. If I want to thicken it, I mix a bit of cornstarch & cold water and add it to the mix.
