  • @winnie1122 I don't know how you've frozen potatoes but I have put twice baked potatoes in a seal a meal bag and they have heated just fine. I haven't tried other forms of potato though
    I’ve tried mashed potatoes and pre-baking slightly before freezing in a recipe as per a blog recommendation, but both times they were really mealy when I thawed and heated them after freezing. Maybe I just need to try different forms of potatoes, those two attempts kind of black listed them for me and I just make the potatoes the day of instead.

    I wonder if it is the type of potatoes you are using too. I haven't frozen a lot of potatoes, but have noticed there are big differences between red, brown, etc. My SIL is picky about what potatoes she uses for what recipes, that is what makes me wonder. 
  • When I started getting really into freezer cooking I totally splurged on a little chest freezer for the garage so I could prep more stuff at once. Haha watch out for the obsession to hit if you start! ;)
    I was just going to ask about this. Our main freezer isn't big enough. Which brand did you buy? How's it working out for you?
  • I made stuffed peppers last night for the first time in years. I forgot how easy they are. I'll be making a bunch and freezing for a veggie packed somewhat healthish meal after baby arrives.

    First, I love stuffed peppers. I do mine w/ ground turkey and orzo for a kinda italian feel. Second, I've seen a lot of crock pot freezer meals for them. Sounds like a great plan!

    I totally agree mashed are no good Frozen and thawed. I have had luck peeling, quartering, and blanching potatoes like Yukon gold, then vacuum sealing them. Once they're thawed, I'm pretty sure I cooked them through and mashed them for things topping casseroles.
