I would definitely start crafting again. I never seem to have time for it anymore! Reading would be a big one too. I have a huge pile of books waiting to be read!

Definitely reading, I can't remember the last time I actually finished a book! Also maintaining better self-care, like straightening my hair, painting my nails, taking bubble baths... all the stuff I usually "don't have time for" in my day-to-day life.
I would sleep, craft (sew/quilt), cook, garden, read -- so many of the things I don't seem to have time for anymore. I'd also consider an online masters program, since I'd have the time to work on the coursework when the house would be quiet. (That's assuming everyone else still has to sleep!)
I agree with @djd0404 reading and self care definitely. I'd also probably clean my house more and organize things. This is assuming other people still have to sleep because if DS or DH were awake too all this would go out the window haha.
Reading would be a big one, also working out, self care sporadically (like painting my toenails--I'm doing that tonight and I just know they'll feel totally dry when I get in bed, but they'll be smudgy when I wake up in the morning!), and if I'm being honest, probably some Netflix binges.
oo. I'd love to finally see the end of my to-do list. I'd also probably keep my house super clean and organized, prep so many yummy and healthy meals, and exercise more.

I'd probably just hang out with the kids and play and spend more time with them during the day, then do all the other crap (housework), including work, overnight. I don't regret being a career mom and I love my job, but I think this would balance the perks of being a SAHM with my passion for my career pretty nicely.
