I've mentioned that I'm (embarrassingly) not a cook, but since I'm the grocery shopper I've actively looked for ways to give DH dinner shortcuts and for other things that are easy for me to eat during the day while he's at work. Anyway, I wanted to make a thread with yummy/healthy/unhealthy/easy recipes and foods you've found! Not necessarily a meal planning thread, but great finds.
Thread inspired by these cauliflower tots:
https://www.greengiant.com/products/detail/green-giant-cauliflower-veggie-tots/ - holy. I think i like these better that regular tots.
I think I've posted about these Mann nourish bowls in another thread:
https://nourishbowls.com/ I love the sesame sriracha & southwest chipotle ones. I have a cauli-rice curry to try this week. Wish the sodium were lower but yummy, filling and easy to throw in the microwave for lunch.

Blake's pot pies - I love the turkey one. Chicken pot pie and shepherd's pie are yummy too. They have single and family servings.
https://blakesallnatural.com/meals/I won't even get started on my Trader Joe's regular buys!
Oh, maybe I should've started with....
Hi, my name is Teresa and I like food.
Re: Fooooood
the fresh roasted sweet potatoes (microwave for 3 minutes and you're good!)
the roasted garlic chicken sausage
the frozen potatoes, peppers and onions
fresh cauliflower rice
my own trail mix: unsweetened coconut flakes, cashews, raw sunflower seeds, raw pumpkin seeds, and raisins
I should mention that I don't eat any added sugar, dairy, or grains so these are all pretty paleo centric.

All of their frozen Chinese meals expecially the mixed veggies and veggie rice, so quick and easy! I also LOVE their frozen green beans and salad dressings (peanut jalapeño is my jam).
I have started meal prepping on Sunday and it's been super helpful. This week I made lettuce wraps but really just threw some mushrooms, diced water chestnuts, onions and udon noodles together with sauce and a little low sodium soy. I'll bag lettuce in ziplocks and just eat it as a salad at lunch. I'll wash, cut and portion fruit too. I have started buying veggies that are already chopped or diced and it makes everything during the week so much easier!!
I'll buy pre marinated meat for hubby (Trader Joe's!) and throw it in the crockpot for chicken tacos like I did tonight.
Another go to meal is spinach and arugula with goat cheese, sunflower seeds, and sliced pear. We usually put salmon over it because it's super easy and quick to make.
I love to cook so now with baby I've had to get creative and really plan and prep when I can otherwise it's mac and cheese (also delicious).

TTC#2 April 2019I really want to try a Whole30 reset but I'm very intimidated because I don't cook (beyond like, scrambled eggs, griddled cheese). Also, I'm sure DH would refuse and I don't want him to have to do separate meals for us. Blah! Maybe that should be my thing for this last week of leave - planning.
Maybe be ill just buy a one piece.
I would say the hardest part about it all was the time it took. I would dedicate a good portion of my Sunday's to prep for the week. Also searching out items that could be used for convenience so I wouldn't need to make it from scratch. But now that I've gotten a few under my belt I've been able to figure out some of those items, which most are at target/Costco.

1 lb ground hamburger and diced onion fried up in a pan. I usually season with salt, pepper, onion powder, and garlic salt. Then add one can of cream of mushroom, a couple large spoonfuls of sour cream and some milk. Stir it around and I will usually add more sour cream/milk until the sauce is the consistency I want. I serve it over egg noodles.
