I've mentioned that I'm (embarrassingly) not a cook, but since I'm the grocery shopper I've actively looked for ways to give DH dinner shortcuts and for other things that are easy for me to eat during the day while he's at work. Anyway, I wanted to make a thread with yummy/healthy/unhealthy/easy recipes and foods you've found! Not necessarily a meal planning thread, but great finds.

Yes! Love this post! Trader Joe's is my obsession. All of their frozen Chinese meals expecially the mixed veggies and veggie rice, so quick and easy! I also LOVE their frozen green beans and salad dressings (peanut jalapeño is my jam).
I have started meal prepping on Sunday and it's been super helpful. This week I made lettuce wraps but really just threw some mushrooms, diced water chestnuts, onions and udon noodles together with sauce and a little low sodium soy. I'll bag lettuce in ziplocks and just eat it as a salad at lunch. I'll wash,cut and portion fruit too. I have started buying veggies that are already chopped or diced and it makes everything during the week so much easier!!
I'll buy pre marinated meat for hubby (Trader Joe's!) and throw it in the crockpot for chicken tacos like I did tonight.
Another go to meal is spinach and arugula with goat cheese, sunflower seeds, and sliced pear. We usually put salmon over it because it's super easy and quick to make.
I love to cook so now with baby I've had to get creative and really plan and prep when I can otherwise it's mac and cheese (also delicious).
We are boring eaters and pretty much everything lately is cook once and reheat. Chili and potato soup have been mainstays lately because they are easy and will make a bunch of leftovers.
Went on my grocery run today! Got two bags of the frozen cauliflower rice to try... and trail mix ingredients instead of buying the "pre-made" And TWICE walked by and resisted the dark peanut butter cups. I have to get this sweet tooth under control.
@hoosiermama The dark peanut butter cups are hard to resist - go you! I have convince myself to walk past the yogurt covered pretzels and I don't even remember if I would like them!
I need to start eating better! I have a wedding to go to at the end of April and I would like to loose weight before then. I want to start up a Whole30 again but since birth sweets have been sooooooooo good. I didn't eat all the junk I am eating now for 2 years, then after I gave birth I just lost it!
@m6agua me too! I have no self control. What's helping me is writing down everything I eat on a paper on the fridge. That way my husband can see it. I find that if I know he will know what I ate I'm less likely to eat crap because accountability.

I really want to try a Whole30 reset but I'm very intimidated because I don't cook (beyond like, scrambled eggs, griddled cheese). Also, I'm sure DH would refuse and I don't want him to have to do separate meals for us. Blah! Maybe that should be my thing for this last week of leave - planning.

This is my problem. I don't cook. Like at all.. so some of these diets that need you to cook and prep all the stuff ultimately keeps me from doing it.
@hoosiermama I think you could do a whole30 if you tried! I would just keep it simple and don't try to do a bunch of fancy recipes. When I've done them in the past I would just scramble some eggs, fry up some mushrooms, onions, spinach, and tomatoes. Mix it all together and eat that each morning for breakfast. I would make a big batch on Sunday so I didn't have to do it all week. Then for dinners just do simple meat, potatoes, and veggies. I would always do frozen or fresh veggies and steam them. Then for the potato I would either slice it and fry in a pan or cube it and roast in the oven. Lunch would be leftovers, tuna/cucumber/tomato/avacado or salad with oil and vinegar or I would make my own dressing. I did buy some pre-made dressing from Tessame's once though. snacks would be small fruit, veggies, nuts, larbars.
I would say the hardest part about it all was the time it took. I would dedicate a good portion of my Sunday's to prep for the week. Also searching out items that could be used for convenience so I wouldn't need to make it from scratch. But now that I've gotten a few under my belt I've been able to figure out some of those items, which most are at target/Costco.
@m6agua is totally right. I'm not a cool at all and I've done three Whole30s. You just need a protein, some veggies and a fat at every meal. It's that simple.
Okay... work is coming and that means I will have LESS time than I already do for life, but especially for food. So, who has easy, on the go breakfast suggestions that can also not hurt weight loss (should it ever occur)? I can't cook in the AM and don't have access to anything of the cooking nature at work (teacher).
@SandNStarsNJ I do a banana and a Kind brand breakfast bar every morning. It's something I can grab and eat in the car and is easy. Then I'll have a string cheese for my mid morning snack (I'm a teacher too, totally get the can't cook thing!!)
Anyone have any good ground beef recipes? I'm tired of spaghetti, tacos, and burgers.

1 lb ground hamburger and diced onion fried up in a pan. I usually season with salt, pepper, onion powder, and garlic salt. Then add one can of cream of mushroom, a couple large spoonfuls of sour cream and some milk. Stir it around and I will usually add more sour cream/milk until the sauce is the consistency I want. I serve it over egg noodles.
I just do an instant breakfast drink (like boost or slim fast) or make my own protein shake. Then you can drink it in the car and it takes no time to prep.
We love ground beef here! Meat balls (meat ball subs or with rice) taco bowls or taco salad(I make tortilla bowls) burritos goulash chili stuffed peppers
We only do ground beef here (H is allergic to chicken/turkey) so we do a lot of tacos, chili, spaghetti. Enchiladas, lasagna are both good too. We are pretty boring, not super healthy eaters which is bad. And now it is what can be made that will result in leftovers so cooking is even easier.
For breakfast, I either bring oatmeal (there's a hot water tap at work) or some greek yogurt and granola. I've been thinking about making some lactation-type granola bars or something to grab instead, just haven't actually done it.

I should mention that I don't eat any added sugar, dairy, or grains so these are all pretty paleo centric.
