Mon - I just put stuff for Chicken n Dumplings in the Crockpot Tues - TACO TUESDAY! It's usually a tradition when I'm not pregnant & fatigued. We alternate between chicken and beef Wed - Pasta with Italian Sausage and Marinara Thurs - I have chicken & plenty of tortillas, so I may do the chicken enchiladas @lyndshurt Do you mind sharing your hubby's recipe? Fri - If I actually cook dinner all week, we'll make this a pizza or takeout night.
@PinkPrincessPiper I will ask him when he gets home! I should warn you though that he is the type of cook who says "a little bit of this and a little bit of that, then see how it tastes"... yeah I need measurements. We'll see what I can get out of him though!
This is fun! we dont plan day by day, and DH cooks everything, but the meals we have planned are:

@secicc12 Taco soup is super easy and kinda like tacos. We usually do a pound of ground meat (we do chicken or turkey, cus I dont like red meat, but beef would work too), a whole onion, 1 large can of black beans, and two small cans of red or pinto or both, two cans of diced tomatoes, and then at the end some frozen corn, all done in a crocpot, but you could do it on the stove. You could add anything else you might like, and we season it with mexican flavors. I like to top mine with cheese and guac, DH likes it with sour cream. It usually makes left overs for the whole week too.

Ive seen the commercials and had no interest in buying one until I read a lady's blog where she said you could put frozen chicken in this thing and it'll be fully cooked in 15 minutes. Im not usually home to start dinner until after 7 so it'd be perfect but it just seems too good to be true

@happylifex3, I have an instapot, but have been too afraid to take it out of the box! Need to bite the bullet and try it out bc everyone seems to swear by them.
@happylifex3 I got an instant pot for Christmas and have had a learning curve. I've perfected baked potatoes but I need to take more time to experiment.
I have an instant pot. I'm also new to it as I normally use the crock pot. But I did make some killer chicken noodle soup (during first trimester when I could barely eat) and it was FAST and easy.
I made crockpot chili over the weekend and it is so so satisfying. 1lb ground meat (I used deer my husband got this winter) 1qt cooked mixed beans (I accidentally soaked an entire bag of beans and had several ziplocks in the freezer for just this instance) 1 can diced tomatoes 2 cans whole tomatoes + 1 can of water, blendered into sauce 1 yellow onion garlic, chili powder, cumin, pepper, salt, crushed red pepper
cook the meat, garlic, and onion, throw everything into the crockpot on low all day or high for at least an hour for all the flavors to blend.
I have an instapot! I don't use it a ton, but whenever I do use it I really like it. My only complaint is that, IMO, the slow cook function tends to run really hot and it can be hard to get that necessary low and slow cooking done that a standard crockpot does well for certain cuts of meat. I do love that you can program cooking times and then it will keep the food warm for you.

What's weird is that I was raised cooking adobo since I was 12 years old and stopped eating it like 5+ years ago bec I was just over it. This pregnancy, the soup with the rice actually holds me over and doesn't make me sick like with everything else. Pregnancy is weird lol.
For some reason none of my regular pre-pregnancy meals sound good so I am trying to come up with new stuff every week to try. I also crave meat when I am pregnant and I included it most of our meals ,I know DH gets tired of it so I try and make it optional in at least some of them.
Monday- Weekly meeting were food is provided. (my favorite night of the week, DS's too because he loves cooking dinner with DH) Tuesday- Minestrone soup with optional meatballs Wednesday- Crock pot Moroccan Chicken Thursday- Maybe Cauliflower fried rice or TBD Friday- Heading out of town so food on the road
@happylifex3 your grilled cheese idea inspired me to have grilled cheese tonight. DH is calling it a pregnancy craving lol. Also super jealous of you guys that do taco Tuesday. I haven't been able to stand tacos since being pregnant.
@Kathryn0903 I know how you feel...I looked at a Taco yesterday and nearly vomited. The worst part is we are heading to San Diego in 2.5 weeks (DH is a born & raised San Diegan so we are visiting my in-laws and celebrating DH's birthday there) and San Diego is famous for their Carne Asada Fries, the mexican food, the tacos, etc. I LOVED it before but just thinking of it makes me sick. I'll be in the corner drinking a fruit smoothie

i have been wasting a lot of food because I used to plan but would either be too sick, to tired or just not want to cook. We decided to buy food every few days instead of in bulk. Then when I get cravings for something I can stop by the store on the way home to grab what we don't have a bunch of wasted food!
Who is sticking to their meal plan this week?! I stuck to the plan for Monday & Taco Tuesday was a success as usual. Tonight was supposed to be pasta, but we are doing breakfast for dinner instead (sausage, eggs, biscuits, fruit). I made pasta salad & regular green salads for lunches & snacks have been mainly yogurt and fruit. Guilty of McDs hotcakes & sausage for breakfast yesterday!
I have to hold myself accountable from here on out; I spent way too much $$ on takeout in the first trimester!

A little onion and celery sautéed together cream of chicken cream of celery chicken - we're using a rotisserie chicken to speed up the process sour cream ^all the above mixed together corn tortillas topped with all the cheese

I have to say I'm jealous of everyone who makes a different meal each night. In our house we make a really big meal on Sunday or Monday and then eat that same thing as leftovers until Thursday or Friday. Both DH and I work full time and I don't usually get home until 6pm so we just have no time to cook during the week. I'm usually good with that plan but during pg I get sick of the same thing so much faster. This week I made beef stroganoff in the crockpot and my other favorite is jambalaya.
@bubblesmtu I used to do more of that when I worked and that was before kids. Now I still make big meals but I freeze a lot of it. Of the 2 meals I have cooked this week I have 4 meals in the freezer for later.
