Monday Meal Plan 1/23

Lets see them ladies!  I hope we are feeling a bit better than last week.  I know I was not able to completely stick it out with my meal plan last week due to some aversions and just not feeling good.

Monday- Left over bison roast with sweet potatoes and quinoa

Tuesday-  Homemade chicken salad

Wednesday- Breakfast for dinner!  Eggs and bacon!

Thursday-  BLT's with the leftover bacon

Friday- Homemade Sloppy Joes with salad and sweet potato fries

Definitely a comfort food week!

  • Monday - Pork Chops - Mac n cheese - corn
    Tuesday - Grilled Chicken Salads
Wednesday - Breakfast Pizza (Its been on the agenda for weeks and I still haven't made it)
Thursday - Cube steak with peppers and onions and baked potato
    Friday - Out

Disclaimer* I am totally not feeling it this week so at least one night after work I will be picking up a rotisserie chicken or burgers (possibly more than one night)
  • Monday - lemon rice
    Tuesday - black bean soup/stew
    Wednesday - Burritos
    Thursday - date night
Friday - spaghetti and veggie meatballs

Burritos are a filler, I tend to make them when I don't know what to cook  Hopefully I'll be up to cooking regularly this week, I've been *so* tired during the day

  • @mightymcqueen my easy go to is quesadillas or nachos with rotisserie chicken, which is Thursdays meal  :p
  • *snip*

Thursday-  BLT's with the leftover bacon

And I supposed I can answer the question, dinner this week will be whatever casseroles are left in the feeezer. Once a month a do a 'casserole night' and make a months worth of dinners and freeze them. Then I just pull one out the night before I want to cook it.

  • Hm, yeah it's been hard to plan since I'm so turned off by so many things but this is what I have so far:
Monday - steak, baked potato, corn, sugar snap peas
Tuesday - baked chicken legs, cole slaw...and another side the kids will eat.
That is as far as I got. Probably a pasta dish or ribs in the future.

Anyone else have to plan lunches for some picky toddlers? Lol it makes meal planning very daunting to me but I want to improve,
  • Monday - hamburgers
Tuesday - Saulsbury steak and potatoes
    Wednesday - spaghetti
Thursday - chicken casserole and broccoli
    Friday - leftovers

  • Monday: Spaghetti squash with kale and Italian sausage
    Tuesday: Tortilla Soup
Wednesday: Spicy noodles with basil and tofu
Thursday: Terriyaki chicken, brown rice, broccoli
    Friday: Out

  • @ashley2824 Quesadillas are my easy lunch option  I would make them for dinner, but my husband has a super-fast metabolism, so burritos will keep him full longer.

  • @ChefRamsay if you are referring to the leftover bacon it is because my stomach can only handle a few good slices of greasy bacon before it makes me a little queasy and DH usually restrains himself from eating the rest of the package! We always have leftovers for salad toppers or such the next day.
  • @GracefulStar I always plan ahead to have something for my son who is 4 if i know for sure he is not going to like what we are having for dinner.
  • @JustBored10 yeah, that was in respond to the leftover bacon comment. There's no such thing as leftover bacon in our house!  ;)

  • I admire anyone who can stick to a meal plan right now! Our meal plan is whatever does;t make me want to vomit that night.

This.  Yesterday I survived on a SlimFast shake, PreggiePops, bread, mac and cheese from Panera (omg yum), and rice with butter, salt, and pepper.  Carbs Carbs Carbs!
