Fruits and Vegetables--What is best>

Re: Fruits and Vegetables--What is best>

  • @glitterfish I use pint size mason jars - leave a little room at the top - for frozen smoothies.  I'm not on my game and haven't made a batch since being pregnant.  Thanks @zara4k for reminding me of what I should be doing!  Question- do you mean you fry your quinoa vegetable medley or you fry/sautée the vegetables before adding them to the quinoa.  I normally make mine without cooking any of the added veggies (make quinoa then add chickpeas, nuts, cranberries, carrots, etc and drizzle olive oil and lemon juice with some fresh herbs).  But I like your idea of adding some extra flavor and mixing it up a bit.

  • @zara4k I'd also like to hear more about freezing the smootbies. I hate running the blender in the morning too, since it wakes up the whole house (I leave by 6:45).

I love fruit, but I especially love baked fruit. Baked peaches are my favorite.  I cut a peach in half and remove the seed then place them cut side down in a baking dish and put about a half of inch of water with a vanilla bean in the bottom.  Bake at 400 degrees for 15 minutes.  The skin will lift right off.  If you cook them with a bit of cinnamon it tastes just like the inside of a peach cobbler.
    I need this now!
  • Has anyone dried mangos? Like how they come in the bag from the store? It's a huge favorite In Our house but the bags are like $5 and we go thru a bag in 15 minutes.

Costco has giant bags. I am OBSESSED. If you're like me and have no portion control, better to immediately move them into many sandwich bags, so you only eat one of those at a time. There's a lot of sugar and sulfur, but...damn, they're amazing!

Seriously, thank you EVERYONE for all of your comments. I can't believe how many people can relate (even if it is the opposite and with vegetables instead of fruit). I have taken your advice on a lot of these to try out this week (including juices, baked dishes, and smoothies). You ladies are fabulous

My husband recently bought a dehydrator. (I have no clue why, we aren't hunters so it won't be used for making jerky.) I've really wanted to try dehydrating mangos, just haven't had the time. They are so good!

@zara4k yes I'm very interested in your general recipe. I was just saying I hate running the blender everyday. If I could make a big batch I would be more willing to make smoothies.

@zara4k What do you put them in to freeze them? Do you defrost in the fridge?
Yes so here's a typical smoothie il make
    3 bananas
3 coconut water (I usually buy taste nirvana to cut costs)
a cup of Mangoes or peaches or both
6 scoops of green vibrance powder
fill the rest of the blender with tons of kale and spinach (like 4 -5 cups i think)

blend till smooth and then I pour like 7-8 oz into a mason jar makes 5 or 6 servings and freeze three and keep two in the fridge and then have one right then.
Have the next two on the following mornings (they are totally fine for 48 hours) and defrost the other two freezer ones in the fridge overnight!

I really hate handling cold fruits and veggies every morning too this at least makes me handsfree for a few days in the morning.

    @caribbeanmama
U can just stir fry the veggies for a minute in some oil and then add ur quinoa and water and cook it all together to make things easier. That's how iv been doing it. eden foods chickpea can are a life saver and bpa free too!

Trader Joe's has organic dried mangoes without any sugar or sulfur, so does moms most of the time. I got addicted to dried persimmons in my 8th week lol
  • @zara4k the Trader Joe's ones taste the best but I spend to much money when I go there and it's not very convenient. Persimmons? Never heard of them, gonna have to look into it.
  • @SPurp13 We have a vitamix but I think the Ninja would be fine!
Oh, I have a Ninja! Duh! I don't know why I thought I would need something specific, other than infomercials tell me I do.

  • @zara4k The Trader Joe's Just Mango slices are a staple in our house. I buy a bag every time I go. We're really picky about ours, though; they can't be too sweet!
