GTKY: Holiday Cookie recipe exchange

On Monday's ticker change the GTKY was about Christmas cookies, which I thought was an amazing idea!! I already got a new recipe!! I thought we could start a "cookie exchange". Please post your favorite cookie and recipe!!

    PERFECT ROLO STUFFED SNICKERDOODLES

    •  INGREDIENTS
    • 1 cup butter, softened
    • 1 cup sugar
    • ⅔ cup brown sugar
    • 2 eggs
    • 1 teaspoon vanilla
    • 2 and ½ cups flour
    • ½ teaspoon salt
    • 1 teaspoon cream of tartar
    • 1 teaspoon baking soda
    • 2 tablespoons sugar
    • 1 teaspoon cinnamon
    • 32 rolo candies

    INSTRUCTIONS

    1.       Preheat oven to 325 degrees. Cream together butter, brown sugar, eggs, 1 cup sugar, and vanilla.

    2.       In a separate bowl, mix flour, salt, cream of tartar, and baking soda. Slowly add dry ingredients to butter mixture until a soft dough forms.

    3.       Roll dough around Rolo candy to form a 1 inch ball. (I use the large cookie scoop)

    4.       In a small bowl, combine 2 tablespoons sugar and cinnamon. Press balls into cinnamon sugar.

    5.       Arrange on baking sheet and bake for 14 minutes. Allow to cool.

  • The Joy of Cooking is kind of the standard recipe bible I was raised with. I grew up using the sugar cookie, peanut butter cookie, chocolate chip, and pfeffernusse recipes from it and they are nearly foolproof.

  • Yes!! Thanks for starting this - I was thinking the same thing! I have a cookie making day with my best friend from HS (and current bump buddy!) and we've been looking for new recipes 

    I'll contribute one that I love and it's SUPER easy!

    Cran-Pistachio Cookies
    1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
    1 box (4-serving size) pistachio instant pudding and pie filling mix
    1/4 cup Gold Medal™ all-purpose flour
    1/2 cup butter or margarine, melted
    2 eggs
    1 cup dry-roasted salted pistachio nuts, chopped
    1/2 cup dried cranberries, chopped

    • Heat oven to 350°F. Line cookie sheet with Reynolds Parchment Paper; set aside. In large bowl, stir together cookie mix, pudding mix and flour. Stir in melted butter and eggs until soft dough forms. Add pistachios and cranberries; mix well.
    • Using small cookie scoop or teaspoon, drop dough 2 inches apart on lined cookie sheet. Press with fingers to slightly flatten.
    • Bake 9 to 11 minutes or until edges are light golden brown. Cool 2 minutes; remove from cookie sheet to wire rack. Cool completely. Store tightly covered at room temperature.

    Minty Witches
    2/3 c. shortening
    1/2 c. sugar
    1 egg
    1 (6 oz.) semi-sweet chocolate, melted
    1/4 c. corn syrup
    1 3/4 c. sifted all-purpose flour
    2 tbsp. baking soda
    1/4 tsp. salt
    Peppermint extract to taste

    Combine shortening, sugar and eggs in bowl. Beat until creamy. Blend in melted chocolate and corn syrup. Sift together flour, soda, salt. Stir into chocolate mixture. Chill several hours or overnight.

    Preheat oven to 350 degrees. Shape into balls the size of a nickel, roll in additional sugar. Place on ungreased cookie sheet and bake 6-8 minutes on top rack of oven. Let stand a few seconds before removing. Do not cool. Turn half of the cookies upside down on rack.

    Top with peppermint patty, top with second cookie. As mint starts to melt, carefully crimp 2 cookies together. Yields: 60 cookies.

  • Yay! Love this idea! Growing up my BFF's mom made the most beautiful, delicious Christmas cookie plate that she'd give to family and friends. I try every year to recreate it to some effect.

    But here's the deal. I'm TERRIBLE at making cookies. Like awful. I make amazing homemade cheesecakes, brownies, crème brûlée, fudge, etc. But the humble cookie completely befuddles me. They always come out rock hard and flat and just plain awful, regardless of my recipe! Anyone have any suggestions?

  • @diann21 I can almost bet it comes down to the butter and how your incorporating it into your cookies! Butter, melted butter, softened butter, room temperature butter; it makes all the difference!

  • @achays11  I swear by the tollhouse recipe.  I swap out the butter for regular Crisco and I don't add the nuts.  You have to have the perfect baking sheet too.I have an airbake sheet that makes them spread out a bit more and another sheet with a silpat mat where they spread less.  Both turn out great.  My sister (a baker) says that you can also add more brown sugar and less white sugar for chewier cookies, but I've never tried it.  My friend adds a vanilla pudding mix to her dough, but I don't know if that changes any other ingredients.

  • I agree with @NotAPlaya-JustCrushAlot that the tollhouse recipe is awesome for chocolate chip cookies. I also cut my time a little on them. My oven runs hot and we like them chewy. 

    This is my favorite go to M&M cook recipe. You add vanilla pudding in the mix and can color coordinate your M&Ms depending on the season. Super easy and by far one of the best cookies ever.

    THE BEST M&M COOKIES
     
    makes 24 large cookies
    INGREDIENTS
    • ¾ cup butter, room temperature
    • 1 cup light brown sugar, packed
    • 1 egg
    • 1 tsp vanilla
    • 1 (3.4 oz) box Instant Vanilla Pudding Mix
    • ¾ tsp baking soda
    • 1 tsp kosher salt
    • 2 cup flour
    • 1½ cup Mini M&Ms, plus ¼ cup more for garnish
    INSTRUCTIONS
    1. Preheat oven to 350°
    2. IN bowl of stand mixer combine butter and brown sugar, beating until combined.
    3. Add in egg and vanilla and continue mixing until smooth, scraping sides as necessary. Mix in vanilla pudding, baking soda and salt.
    4. Finally add in the flour and beat until just combined.
    5. Stir in M&Ms.
    6. Using a large cookie scoop, scoop dough onto lined baking sheet about 2 inches apart. Bake for 9-11 minutes until edges begin to golden.
    7. Allow to cool on baking sheet for 3-4 minutes and then transfer to wire rack to finish cooling

  • Following this as I am waiting for my mom to email me recipies. Since I'm sure DD and I will be the only ones to really eat Christmas cookies, my list is short:
    Peanut butter balls (family tradition)
    Sugar cookies w/ icing
    Thumbprint cookies
    ...and it's not really cookies, but I'm thinking of doing some sort of muddy buddy Christmas  mix.

  • Anyone have a good gingerbread cookie recipe? We are finally getting our own place this weekend (moving out of the in-laws!) and I've been dreaming of making these in my own kitchen... sounds therapeutic I guess! 
  • This recipe is a copy cat recipe for the sugar cookies with the frosting you can buy at the store. Omg they are amazing! If you add 2 tbsp of meringue powder it stiffens up the frosting just like the store.

  • Snickerdoodle Blondies---the best thing ever!

    2 2/3 cups all-purpose flour
    2 teaspoons baking powder
    1 teaspoon salt
    2 cups packed brown sugar
    1 cup butter, at room temperature
    2 eggs, at room temperature
    1 Tablespoon vanilla
    2 Tablespoons white sugar
    2 teaspoons ground cinnamon


    1. Preheat oven to 350 degrees. Lightly grease a 9 x 13 inch baking pan.
    2. In a large mixing bowl, beat together the butter, brown sugar, eggs and vanilla until smooth. Add the flour mixture to the egg mixture and beat until well blended. Mix in flour, baking powder, and salt.
    3. Spread the batter evenly in the prepared pan.
    4. In a small bowl, combine the white sugar and cinnamon.
    5. Sprinkle the mixture evenly over the batter in the baking pan.
    7. Bake for 25 - 30 minutes or until the surface springs back when gently pressed. Remove from oven and let cool slightly on a wire rack. 

    I also add in a half bag of cinnamon chips. I put most of the cinnamon chips in the batter and sprinkle some on top. They are sooo good!

  • Not a cookie and it sounds strange but is seriously one of the best things I have ever eaten- Christmas Crack- made with butter, brown sugar, melted chocolate, and saltine crackers. It like a toffee- Amazing!

    During the holidays, I love this Lemon Snowball Cookie recipe. Instead of the lemon oil it calls for (because seriously, who has that?), I use 1 tablespoon of lemon juice plus the zest of 1 lemon. It gives it a nice subtle lemon flavor without changing the consistency of the cookie. Also, I only coat it in powdered sugar (because again, who has lemon juice powder?).
