Slow Cooker Salsa Verde Chicken Bowls I made this a little while ago and it was delicious. It took about 10 minutes to get it into the crock pot, and there was hardly any cleanup. The only thing I added was sour cream because if I hadn't, the first thing out of MH's mouth would have been, "Do we have any sour cream?" Easy, delicious, low cleanup, and the leftovers were really good.

I made a brownie batter dip I found on Pinterest that I could have just as well eaten by the spoonful.
Recipe: 8 oz softened cream cheese 1/2 cup softened butter 2 1/2 cups of powdered sugar 5 tbsp all purpose flour 5 tbsp cocoa powder 3 tbsp brown sugar 1-3 tbsp milk 1 tsp vanilla 1 tsp sea salt 1 cup mini chocolate chips
Beat the cream cheese and butter in a mixer until smooth. Add brown sugar, cocoa powder, flour, vanilla, salt and 1 tbsp milk and mix. Once that is all mixed, add the other ingredients and blend. Save the chocolate chips for a garnish. I served with fruit and pretzels.
Everything is always minimal prep and cleanup because my husband does 100% of the food related stuff in our house.
But tonight we are having hot pot! Basically you have a pot of boiling soup (typically really spicy. We have a little propane boiler so it is on the table while you eat, still boiling) and then you have small bowls filled with all sorts of raw veggies, uncooked meats, and different kinds of mushrooms. You throw the stuff in the soup for a minute or two depending on the item and eat it with a mixed satay/soy sauce dip.
I also made a peach and blueberry greek yogurt cake last week for my mom's birthday. It's so easy, but looks so fancy! Everyone at work thought I bought it from a fancy pants bakery.
@antoto that looks absolutely amazing and makes me want to do a hot pot/ fondue night so so badly @Kiki75 there is nothing in my house that isn't topped with sour cream (if it is my choice) or greek yogurt (when DH wins). That bowl looks delicious
I am having my fourth night of chicken tortilla soup from a recipe I got with the vitamix blender, I have the book at home but I found it online on a random guy's blog:
I use this recipe (plus some jalapenos with seeds thrown in for kick) then I chop onions, peppers, and some grilled chicken to add in. Top with some shredded cheese and sour cream. Voila! Make a big pot and DH and I eat it all week during crazy busy weeks.
My other favorite kitchen gadget is the spiralizer for gluten free noodles (DH has celiac, I love red sauce). And this blog has been my go to for quick veggie based but still yummy and pretty meals. The cookbook is great too. I like the sausage soup with spiralized carrots and kale. one pot shop!
@WillRunForWine21 I've been debating getting a spiralizer - thanks for the recommendation! I had soooo many zucchinis in my garden this year and was running out of things to do with them, but I didn't pull the trigger. Maybe I'll ask for one for Christmas

@SpongeWorthy if you have a kitchenaid mixer they now make an attachment for that! its more expensive (the hand spiralizer is like 40 bucks, the attachment closer to 90) BUT it is a miracle and I have found a lot with that site/book that have sparked my imagination to create some yummy dishes

@antoto Is that the same as pho? I've been on such a pho kick - i've had it twice this week. Whoops.
Nope pho is just soup served in a bowl. Hot pot is something you actively cook and eat yourself while sitting at the table. You don't actually drink the broth that you use to boil the food for hot pot, you just eat the food.
My go to easy and not messy food is Little Cheddar Meatloaves. They take a bit of time to bake but are so easy to make and cleanup is just a bowl, measuring cups, and baking dish. Plus it's total comfort food.
Little Cheddar Meat Loaves
1 tsp salt
1 egg
¾ cup milk
1 cup shredded cheddar cheese
½ cup quick cooking oats
½ cup chopped onion
1 lb. ground chuck
In bowl beat egg and milk. Stir in cheese, oats, onion and salt. Add beef and mix well. Shape into 8 loaves and place in (sprayed) 13x9 baking dish. Combine:
2/3 cup catsup
1 ½ tsp mustard
½ cup packed brown sugar (honey or ½ and ½)
And spoon over loaves. Bake uncovered at 350° for 45 min or meat registers 160°. These can be made ahead and frozen. Just thaw and heat to warm.

@bumpybump Ooh, I love these! I make them in a muffin tin and call them meatloaf muffins. They reheat so well and you can make them such a great "clean out the fridge" dish. (Leftover carrots? Parsley? Celery? Mince it up and plop it in.)
Another one I love when I'm craving an Asian type dish but don't want to go through the work.
Korean Beef
Ingredients:
1 lb lean ground beef 1/2 cup brown sugar 1/4 cup soy sauce
1 Tablespoon sesame oil 3 cloves garlic, minced 1/4 teaspoon ground ginger 1/2 – 1 teaspoon crushed red peppers (depending on how spicy you like it) salt and pepper 1 bunch green onions, diced
Rice, cooked
Directions:
Heat a large skillet over medium heat and brown hamburger with garlic in the sesame oil. Drain most of the fat and add brown sugar, soy sauce, ginger, salt and pepper and red peppers. Simmer for a few minutes to blend the flavors. Serve over steamed rice and top with green onions.

Tonight for dinner we're having chicken pot pie. I made a few earlier this month and froze them. So it's a quick dinner tonight but not a quick recipe. I'll share one of my favorite quick dinners though.
Ramen Noodle Stir Fry 2 packets Ramen noodles Veggies (frozen stir fry veggies, broccoli, canned mushrooms, peas or whatever you have) about a cup or two Chicken or pork, about a cup or two (left overs or frozen work great) Onion 1 cup water 1 tablespoon corn starch
Heat some oil in a pan and cook veggies. Season with garlic poweder, salt and pepper. Remove from pan and set aside. Heat more oil in same pan and cook meat and onion. Meanwhile cook Ramen noodles as normal. Simmer 1 cup water, Ramen seasoning packets and corn starch together a few minutes until thickened. Mix everything together and enjoy!
I hope that makes sense. I don't always follow recipes and just throw things together instead, so it can be hard to explain. Plus mobile typing.

This is super simple but it's something my mom made when we needed a quick dinner or I wasn't feeling well so it brings back memories.
1 packet of Knorr butter noodles (or any other brand) Veggies - mushrooms, carrots (cut), celery, corn, etc
Cook the noodles according to the instructions on the package About 5 minutes before they're done, throw in the vegies (or cook them in a separate pot) Mix all together when everything is done.
@Kiki75 are YH and MH the same person??? sour cream is an absolute Must in our house!
@Spongeworthy no judging! we grew up eating salmon patties in our house, and I still make them for DH pretty often, especially for fish Fridays ;)
@ChefRamsay I'm like that too, with no recipes, but it always comes out yummy! DH would like me to cultivate more actual recipes so my offerings become more predictable, tho. like when I make, "my lasagna," everyone knows what they're going to get, kind of thing. but I find the experimentation and using what's on hand so much more fun!
Ooh, so this is not dinner, but after spending way too much on takeout for the guys yesterday, this is so easy and fa-reaking genius! I made these for lunch today.
PIZZA ROLLS!!! (Stromboli?) My MiL and Aunt make these for the girls, too, to snack on, with pepperoni, but we had ham, so I'm using that.
2 thin crust instant pizza crusts from the fridge section, pop-the-can type Plenty of mozzarella cheese Ham/pepperoni, whatever simple filling you like 1 jar of your favourite jarred sauce, for dipping.
Preheat oven according to package directions (mine says 400°) Unroll the first dough into a simple rectangle that will fit in your pan lengthwise. ( best to work on a separate cutting board/work surface and transfer completed roll onto pan) Layer your shredded mozz generously. Layer your meat/ filling evenly (I made sort of a ham chiffonade lol) I was using two kinds of mozz, so I finished with an extra layer cut from the block.
Roll it up! lengthwise, and try to seal the ends, so the cheese doesn't leak out and burn *Repeat the process for your second crust, and transfer both rolls to your greased baking sheet.* Bake until golden brown, approx 20 min. (Warm up sauce to serve on the side .) Let cool before cutting into ~ 1"- 1.5" slices and serve on a long platter. Yum!
Just one tip though I learned from doing it today, with the ham, or other "wetter" toppings like spinach, mushrooms, etc. you may want to pat dry or press out the extra moisture so your roll holds together better. lol Mine were oozing a bit when I cut them, but oh sooo good! I should have taken a picture! lol
