Meal Prep Monday - 9/5

Figured I'd go ahead and start this one today :)

So let's hear it - what are you ladies cooking this week??

  • I just made my list for shopping today!

    Both H and I work a lot so I do a big "cook" two weeks in a row and we make meals out of those items. We put several days worth in the fridge and freeze meals that we can take out and use the following few weeks. This cook includes....

    -Zucchini casserole (brown rice, ground turkey, zucchini, peppers and tomatoes from the garden, sour cream and cheese)
    -Mediterranean Chicken Pasta (chicken breast stuffed with kalamata olives, artichoke hearts, onion, roasted red pepper and cream cheese over brown rice pasta and a white sauce made with cashew milk)
    -Hamburger Rolls (lean ground beef, any can of soup- I'm using lentil- lots of sautéed veggies and biscuits)
    -a veggie, meat and rice mixture that can act as a side or stuffed into squashes and peppers from the garden.
    -Then we willgrill up chicken, salmon and veggies and portion them out.  


    We we take meal prep serious around here!

  • So glad you posted this. I haven't planned my week yet, but I will hit the store today for my basic go to ingredients.

  • I'm trying to eat less meat and dairy, so I have cooked green beans, butter beans, and lentils. I also have a stash of regular potatoes and sweet potatoes on hand. 
  • I'm not great with meal prep but this is my menu for this week in no particular order. 

    - Potato soup or white chili (haven't decided yet)
    - Taco salad
    - BLTs with avacado, side of sweet potatoes 
    - Chicken in the grill with quinoa
    - Steak with couscous. 
    - Chicken and spinach alfredo flatbread
    - Lasagna Rollups







  • This week, we are doing..

    Shrimp Tacos
    Chili w/ Cornbread
    Roast Whole chicken w. roasted veggies
    Thai Turkey lettuce wraps

    @redpuma119 Do you bake that hamburger roll thing like a pot pie? With the biscuits on top? 

    @savi925 OMG I love BLTs but always forget they exist until someone mentions them lol... I may have to talk DH into blts next week :)
  • @hezzer78 You cook the meat and veggies, add the soup. Open the entire package of biscuits and roll it out. Place the mixture on top and spread it out evenly. Then roll it all up into a tube shape and then slice it. Then lay those slices on their sides (so you can see the insides and the biscuit wraps around it) in a baking dish and bake. I top mine with chili sauce
  • We are doing green Chile chicken enchiladas, Italian chicken with veggie risotto, & baked tortellini. I get super burned out on cooking, so I cook 3-4x/week and then just make a bunch for each meal so we have leftovers. Lazy mom's guide to life
  • @hezzer78 - Even though I'm trying to get off the meat train, your 'whole chicken' meal has me jealous! I think I usually underestimate how long they will take to cook and dinner has been quite delayed before. The last time I made one...my husband suggested I just buy a rotisserie chicken from now on! It cut me deep, but was also hilarious! 

  • Even though it's still warm out I made stew for my weeks lunches, It's going to be hard with no lunch meat. 

    Mon- leftovers
    Tue- Steak
    Wed- Greek Chicken
    Thur- unsure
    Friday-Brats

    This week we are having steak salads, shrimp fajitas, and lasagna!
