I made this last night and it was yummy. Smoked sausage (2 packs) (I sliced and carmelized) 2 cans red beans 4 servings brown rice 1 bag frozen corn 1 can red-gold basil-garlic-onion tomatoes 1/2 can tomato sauce Water to thin Cajun seasoning 1 med onion Penzy's 4S smokey Pepper
Just made it up as I went and it was a hit. Basically threw it all together to simmer and it was so easy. I imagine it would be an easy slow cooker meal.

So I just got inspired and I'm going to make chili and cornbread for dinner tomorrow. I'm going to cook the meat tonight and put everything in the crock pot in the morning since H is working tomorrow night, he'll just have to put the cornbread in the oven and dinner will be ready when I get home! Yum!!!
My husband laughs at me and says I'm totally a Michiganer for my love of apples (he's from out west). He is still dumbfounded at cider mills as being a whole afternoon activity and my love of cider & donuts (and all things apple). I'm currently cooking 6lbs of apples to make homemade applesauce. Best fall snack--cold or hot. Just 2 kinds of apples 3lbs each is great. I typically use red delicious and galas, but any 2 works perfect. No need for added sugar (or anything really), but occasionally I'll add cinnamon). Amazing!
@purplewriter Yes!! I grew up in MI but moved to SC 5 years ago. Right now I can't wait to go apple picking in the mountains and get apple cider doughnuts!! Although NC apples are not the same.
I'm OBSESSED with honey crisp apples and anything that has cinnamon and sugar right now soooooo this homemade apple crisp was INCREDIBLE!!!! Served warm with vanilla ice cream... Ugh, don't mind me... I'm drooling again!!!
@TeacherMom2517 Honey crisp apples are my absolute favorite, and now that I have seen these pictures, I need this in my life. Like immediately. Do you think it would ship well to Florida?
@WinchesterGirl I think even if I tried to make two of them so that I could eat one and ship the other, they would both mysteriously vanish before ever making it down to Florida! I just made a fresh one and my house smells phenomenal!!
@TeacherMom2517 I made it from a mix this time simply because I didn't have the time or energy to put one together myself. But I did make some tweaks and it was really yummy.
@TeacherMom2517 I posted my recipe for cornbread earlier in this thread. It is sweet cornbread though, so if you like it unsweetened you may not like it.

Waffle iron omelettes because I'm lazy and they're super easy to make. To make two of these baddies, chop 2 mini bell peppers and however much onion you like, and a handful of spinach. 6 eggs and 3/4 to a full cup of milk, whisk it all together with pepper to taste. Ladle the mix into a waffle iron and cook just like you would waffles, when it's almost done put plenty of mozarella (or whatever cheese you like) on top and let it sit for a moment with the iron open so it melts. Use a fork to flip one side over (like a taco) and serve hot. I cover mine with sour cream and fresh tomato, H likes his with hot sauce. I usually broil up some hash browns at the same time since they pretty much take the same amount of time to cook. Sorry for the crummy picture, I was hangry by that point!

So, this isn't Fall themed... But, it is easier now that its cool enough to turn on the oven. A whole roast chicken in about an hour (not counting preheating the oven). Also, you can throw in some veggies (potatoes, carrots, Brussels sprouts) that'll cook in the juices to make it a one pan meal.
