I make this side every year for thanksgiving. I cut all veggies mix the orange juice and spices and put everything in a ziploc bag first thing in the morning and let the veggies marinate. It's so good!
This thread is like incredibly inspiring and I think we need to do more recipe threads like this. I love finding recipes on Pinterest but when they come from people who can vouch for them? Even better.
Ooh, soup. I'm not a huge soup person but this one is so unbelievably good, I've made it over the summer twice. And it's relatively healthy, hearty, and just warms you up on a cold day/night.

I wish I had a picture of this because it's beautiful and amazingly delicious! Someone at my work made this salad for a potluck and sent the recipe around so I made it for a friend's baby shower and everyone raved about it. People at my work refer to it as "the salad" and still talk about it from last November.
Pomegranate/Butternut Squash Salad
For Pomegranate Vinaigrette:
1 tablespoon minced shallot
1 tablespoon pomegranate molasses (you can also make this if you can't find it in the store, I googled a recipe)
1 tablespoon balsamic vinegar
2 teaspoons lemon juice
2 teaspoons chopped fresh thyme
1/4 teaspoon kosher salt
1/4 cup extra-virgin olive oil
2 teaspoons water
For Squash & Salad:
1 1/2-2 pounds butternut squash, peeled, seeded and cut into 1/2-inch pieces
2 teaspoons extra-virgin olive oil
2 teaspoons fresh thyme leaves
1/2 teaspoon kosher salt
Freshly ground pepper to taste
6 cups torn frisée or curly endive (or salad mix)
6 cups torn radicchio
1/2 cup pomegranate seeds
1/3 cup pistachios or walnuts, toasted and coarsely chopped
To seed a pomegranate, fill a large bowl with water. Lightly score the fruit into quarters from crown to stem end, cutting through the skin but not into the interior of the fruit. Hold the fruit under water, break it apart and use your hands to gently separate the seeds from the outer skin and white pith. The seeds will drop to the bottom of the bowl and the pith will float to the surface. Discard the pith. Pour the seeds into a colander. Rinse and pat dry. Seeds can be frozen for up to 3 months. To toast whole nuts, spread on a baking sheet and bake at 350°F, stirring once, until fragrant, 7 to 9 minutes.
DIRECTIONS
Preheat oven to 375 degrees F.
To prepare vinaigrette: Mix shallot, pomegranate molasses, vinegar, lemon juice, thyme and salt in a small bowl. Whisk in 1/4 cup oil, then water.
To prepare squash: Place squash on a baking sheet, drizzle with 2 teaspoons oil and toss to coat. Spread in a single layer and sprinkle with thyme, salt and pepper. Roast, stirring once or twice, until fork- tender, 15 to 25 minutes (depending on the type of squash). Let cool.
To prepare salad: Place frisée (or endive), radicchio and the squash in a large bowl. Add the vinaigrette and gently toss to coat. Divide the salad among 6 plates and sprinkle with pomegranate seeds and pistachios (or walnuts).
@hudson1029 I read an article that said they will be out at the end of the month. I go on a weekly hunt for pumpkin items, so I'll let you know as soon as I spot them!
This is one of my favorite recipes-pumpkin mushroom risotto. I use veggie broth instead of chicken and a cup of roasted actual pumpkin (or butternut squash, they taste the same) instead of canned pumpkin. Any mushrooms will do. I've been getting some from our local farmer's market and they are expensive but the quality and taste is effing amazing.
Ermagerd soup!! My sister makes a yummy leek soup! It doesn't look fancy but my mouth likes it a LOT. She gave me the recipe but where the hell did I put it?!!!
I get so excited when the cranberries start showing up in the grocery stores - I always make these two recipes around Thanksgiving.
Cranberry Almost Pie - 2 c fresh cranberries - 1/3 c chopped pecans or walnuts - 1 1/2 c sugar, divided - 2 eggs - 1 c flour - 3/4 melted butter
Preheat oven to 325 degrees. Grease well a 10-inch pie plate. Spread dry cranberries over bottom of pie plate. Sprinkle with nuts and 1/2 cup sugar. In small bowl of electric mixer, beat eggs well. Add 1 cup sugar and beat until well mixed. Add flour and melted butter, beat well. Pour over cranberries. Bake for about 45 minutes or until golden brown.
Notes: I have also used frozen cranberries b/c I always buy too many and throw a few bags in my freezer. I skip the pecans/walnuts b/c I don't like nuts in things. I also cut back on the sugar in the first step, using 1/4 c instead of 1/2 c (I really like the tartness of cranberries, so this is a personal preference).
This got lost and I feel like it shouldn't be! Anybody have any suggestions on a good pumpkin pie yogurt? I got the walmart brand, but I think the Chobani looks really good.
@scifichick09 I like the Chobani pumpkin yogurt! I also like the Oikos one. One of them makes one with steel cut oats...I can't remember which one from last year but it gives you a little extra full-ness. Also, Chobani makes a "Flips" pumpkin pack too - it has like graham crackers and stuff I think. So yummy!
