Last night I got adventurous and made fried stuffed squash blossoms with an heirloom tomato salad and hot chili oil. I must have had a vegetable craving when I ordered our groceries b/c I got a million colorful & seasonal vegetables. I'm happy b/c during the first weeks of this situation, I was really turned off to raw veggies and even fruit. Happy to say that's over, although I still can't even think about quinoa, which used to be one of my favorite foods!

I just mixed up some fresh ricotta, shredded parm, shredded fontina cheese, & S/P for the stuffing. Mozzarella would work in place of fontina but I didn't have any & was too lazy to walk to the store. I also think the dish would benefit from some torn fresh herbs on top but again...lazy.

Yesterday I had a craving for spinach dip, so that's just what I made.
I normally never make potatoes for some reason (just don't love them I guess) but I'd love to hear what you or anyone else dresses their spuds in!

DH and I went to McAllisters so I could have a monster loaded baked potato and it seriously made my life! Was so good. Still on my grilled cheese, soup, ramen, cottage cheese diet which will hopefully evolve in the next couple of weeks!

The other day I ran out to get some milk and I walked by a shelf of cereal. I couldn't leave without frosted mini wheats and have had cereal for breakfast every day since. Also blueberries, carrots/hummus, and mashed potatoes.

I can't eat or smell anything with garlic. At all. Any amount of garlic and I'm gagging. My mom bought a rotisserie chicken the other day and I could smell garlic. She said she didn't buy the garlic one (apparently there's a garlic butter chicken), but lo and behold, garlic was like number 20 on the list of seasonings and I could tell. DH has started calling me the "garlic bloodhound".

Then.... I woke up this morning wanting PB puffs cereal which I NEVER eat for breakfast. It's more like the occasional dessert for us.
Come down stairs after they left..... ALL of the PB puffs which i just bought a couple days ago....were gone. Empty box in the recycling bin.
You know what... I'm back to being happy to having my house back.
(I maybe bought extra bread too. It's all about balance, yall.)
